Bran muffin combining mud cake ingredients and bran muffin recipes.
Next attempt I will use brown sugar rather than raw sugar.
This experiment I used 400g milk chocolate
2 eggs
half cup raw sugar
tsp salt
tsp baking powder
half tsp baking soda
cup and 1/4 self raising wholemeal flour
cup and 1/2 wheat bran
tbl sp molasses
tbl sp golden syrup
200g butter
2 tsp ginger
1 tsp nutmeg
1/4 tsp cinnamon
2/3 cup chopped pitted dates
1/4 cup milk
Method
melt chocolate with butter and sugar in microwave, combine all wet ingredients.
combine all dry ingredients in separate bowl
blend dry ingredients into wet
oil ramikin or use baking paper
fill to half of ramikin
microwave 1 min
For a lighter muffin whisk egg first and mix wet ingredients with mixer to add more air.
I've added two youtube channel recipes as a reference for proper measurements. The mud cake recipe has 4 eggs. I need to play around with these two recipes to find the perfect bran muffin.

Banana-Date Bran Muffins
Ingredients
2 extra large over-ripe bananas mashed
1/2 cup olive (or veg) oil
1/3 cup sugar (add more if you like it sweet)
2 extra large eggs
1 cup plain yoghurt
1 1/2 - 2 teaspoons pure vanilla ( I normally add extra)
1 1/2 cup all purpose flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup bran flakes
4-6 medjool dates pitted & chopped
Milk/cream to adjust
Nuts optional - see note
Method
Preheat oven to 350F. Mash the bananas, add in yoghurt, mix in the bran flakes and set aside. Sift together flour, baking powder, salt, spices and sugar. Whisk to blend evenly, then coat the chopped dates with the flour mix. Add the oil, eggs and vanilla to the bran mix. Blend together. Mix in the wet and dry ingredients making a smooth batter. Adjust with milk if the mixture is a bit dry and then fill the greased muffin pan or paper cup lined muffin pan. Bake in the middle rack on a convection setting if preferred for 25-30 minutes or until cake tester comes out clean. Makes 12 muffins.
Note
Nuts can be a choking hazard to kids, especially little bits that’s added into the muffin mix, I normally use a whole nut to decorate or abstain from using nuts if I’m baking for kids. On the other hand, if it’s for adults who love nuts I include it into the muffin batter.
Tips
The hand mixed muffin batter gives this batch a soft, light, airy and crumbly texture. Adjust sugar to taste, dates are quite sweet on their own so I normally add less sugar when using dates in my recipes and the combination of dates and bananas are enough to eliminate sugar totally which I sometimes do because I don’t care for extremely sweet things. muffins are great for lunch boxes, a quick grab and go breakfast or as an anytime snack and so simple and quick to make. The texture of ingredients will vary globally so sometimes you may end up with a drier batter, also because of the bran absorbing liquid ingredients so use milk or cream to adjust the consistency. When bananas get over ripe especially so in summer, do not waste them, freeze them in a freezer bag, then thaw and use in baking, it mashes up very easily and spreads evenly into the batter.
