How To make Crunchy Bran Muffins
MUFFINS:
1 1/2 c SHREDDED WHEAT brAN CEREAL
1 c HOT MILK
1 c ALL PURPOSE FLOUR
1/3 c PACKED brOWN SUGAR
1/3 c BUTTER, MARGARINE, SOFTENED
2 ts BAKING POWDER
1/4 ts SALT
1 ea EGG
CRUNCHY TOPPING:
1 tb MARGARINE, FIRM
2 tb FLOUR
2 tb brOWN SUGAR
HEAT OVEN TO 400 DEG F. GREASE BOTTOMS ONLY OF 12 MUFFIN CUPS. MIX CEREAL AND MILK. LET STAND UNTIL CEREAL IS SLIGHTLY SOFTENED. STIR IN REMAINING INGREDIENTS, EXCEPT FOR THE CRUNCHY TOPPING, JUST UNTIL FLOUR IS MOISTENED (BATTER WILL BE LUMPY). FILL MUFFIN CUPS ABOUT 2/3 FULL. SPRINKLE WITH CRUNCHY TOPPING. BAKE UNTIL GOLDEN, ABOUT 18 TO 20 MINUTES. REMOVE FROM CUPS IMMEDIATELY AND LET COOL SLIGHTLY. TO MAKE TOPPING: CUT MARGARINE INTO FLOUR AND SUGAR UNTIL CRUMBLY.

I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. 1 1/2 cups whole wheat flour can substitute all purpose flour
2 cup wheat bran
1 cup brown sugar
2 tsp baking soda
1/4 tsp salt
2 1/2 cups almond milk or other nondairy milk
1 cup applesauce unsweetened
3 tsp vanilla extract
Directions:
In a large bowl, mix everything together and pour the mixture into your muffin molds/cups.
Bake 350 for 20-24 minutes
Make about 16-18 muffins.

Baking All-Bran Muffins!!
All-Bran Muffins are an all time favorite! Nothing is better than a warm muffin in the morning! Anyone can bake these! Very easy recipe for a breakfast (or late night) treat!
Recipe
Soak
1.5 cup All-Bran in 3/4 cups milk
Add
1 egg and 1/4 a cup of butter
Sift and add
1 cup flour , 1/2 tsp of salt, 2 and 1/2 tsp of baking powder and 1/2 cup of sugar
Add cinnamon and Vanilla extract to taste (one tsp each)
Bake at 400 for 13-17 min or until toothpick comes out clean
serve and enjoy! Freeze to preserve
