How To make Brandy Snaps
4 ounces golden syrup
3 1/2 ounces caster sugar
4 ounces butter
3 1/2 ounces flour -- sifted
1 teaspoon ground ginger
grated rind of 1 lemon 1 teaspoon lemon juice or brandy
Put the syrup, sugar and butter into a heavy saucepan and warm, stirring, until the sugar has dissolved and the butter melted. Remove from the heat and tip in the flour, ginger and lemon rind. add the lemon juice or brandy and mix well. Drop teaspoonful of the mixture 3 inches apart, on greased baking sheets. Bake in a pre-heated moderate oven(325F) for 10 minutes or until golden brown. Remove from the oven and roll around the graesed handle of a wooden spoon whilst hot. do not allow them to cool as the snaps will become hard and impossible to roll.

Pistachio Brandy Snaps
On popular demand sharing this Eggless Quick recipe of Brandy Snaps with California Pista White Chocolate Filling. Takes just few minutes to bake.

Ingredients :
25 gm melted butter
25 gm brown sugar (caster sugar is optional)
25 gm honey (jaggery syrup is optional)
Pinch of grated ginger
2 drops lime juice
25 gm plain flour (maida)
120 gm melted white chocolate
1 tsp cooking cream (fresh cream)
Approx 50 gm finely chopped California pistachios
Method :
Take a small pan, add 25 gm melted butter
Add 25 gm brown sugar (for nice colour & texture/ caster sugar is optional)
Add 25 gm honey (jaggery syrup is optional)
Heat up the pan and keep stirring
Keep it on medium flame until it mixes well
Turn off the stove and add a pinch of grated ginger
Add 2 drops lime juice
Add 25 gm plain flour (maida) and mix it well
(Mix all ingredients when mixture is warm)
Now take a baking tray, place parchment paper in it.
Pour 1 tsp batter (for each cookie)
(It expands when baked, keep enough space in between)
Keep the tray in 10 mins preheated oven and bake them for 10 mins at 180⁰
Keep tray in the middle rack, keep lower and upper both the rod on
To make pistachio filling, take a mixing bowl, add 120 gm melted white chocolate
Add 1 tsp cooking cream (fresh cream)
(To make ganache fluffy, use electric/hand beater)
Add some finely chopped California pistachios, mix it and add ganache in a piping bag
(Take approx 50 gm California pistachios soaked in lukewarm water & then chop)
Further remove the tray from oven
Take a rolling pin, place it on cookies and roll over covering the rolling pin
(Roll it when cookies are warm to give them shell shape)
Fill ganache in each brandy snap/cookie
Stick some chopped California pistachios on both sides of filling
And then your Yummilicious Pistachio Brandy Snaps ready!!!

British Brandy snaps recipe
In the video today we will be making another classic British dessert Brandy Snaps. These are lacy crunchy biscuits that when warm can be bent into different presentation shapes. These could be a fun dessert for valentine’s day or for a birthday. You can dip them with chocolate, fill them with fruit or fill them with flavoured cream (orange lemon) or as we do in the video drizzle some baileys cream. Ingredients
27g butter
27g brown sugar
25g flour
27g Syrup
1/4 tsp ginger
1/4 tsp lemon
180c 5-7min until golden
Take them out of the oven and let them cool just enough so that you can hold them and bend them into the shape you would like.
A few other ideas
- Fill with a flavoured cream with orange or lemon (zest and juice)
- Drizzle over some alcohol or mix it in with the cream. ( brandy or my personal favourite is Baileys cream)
- Dip the Brandy snaps in chocolate, or drizzle some melted cholate over the top or just add some chocolate shavings at the end.
- Use any variety of fruit.
- Make any shape you would like . Sometimes I will cut out a heart shape while hot or make a dome shape to place over other desserts.

Brandy snaps are a popular snack or dessert food in European countries .They are often tubular, brittle, sweet, baked. Brandy snaps are typically served filled with whipped cream.They are commonly made from a mixture of golden syrup, flour, cream, sugar, butter and lemon juice.
BRANDY SNAPS
Ingredients
95 gr Honey
138 gr Flour
175 gr Icing sugar
90 gr Butter
Method
1. Mix all together
2. Keep mix in the fridge
3. Put small lumps on silpat or greased trays
4. Bake at 180c
1-Preheat oven to 180°C
2-In a bowl take melted butter and add honey .
3-Add dry ingredients to form a paste.
4-let the mix cool down in fridge for 30min.
5-Line a baking tray with silicon sheets and make round balls of 15gm
6- arrange on tray at equal distance.
7-bake at 180c for 20min, till you get golden colour.
6-Leave to cool slightly before putting in tart mould. Leave to set until hard and cool.
7-You can also make brandy snap baskets or different shapes
8-Store in an airtight container.
9-or you can pipe drop of cream on individual, top with cherry & chocochip.
10- dust with icing sugar.
