(this measurement is for large batch cooking up to 20 serving)
Chilli Con Carne is one of the more #delicious dishes that I have managed to recreate at home with the help of my own taste buds, and preparing it in volume was I thought a challenge, but I found out it was my equivalent of a yoga session.
One of my husband’s favourite is Chilli Con Carne, He would always say, the best “Chilli Con Carne he has tasted”. Of course, I appreciate it but never believed him as he always likes my cooking.
But, Covid-19 happened and lockdown has been implemented in the UK in March 2020 and elderly people were not only scared to go out but have been asked by the government not to. So I volunteered to do the shopping for them, and some days cooked some food to share with them and to my other friends who were within the boundary where I am aloud to drive and deliver the food at their door steps, and surprisingly heard a very nice feedback, they loved it and indeed they are even asking for my recipe.
So Here I am wanting to share my recipe and my journey in the kitchen with all of you guys.
I hope you will enjoy the cooking and of course the explosions of taste.
Ingredients
Preparation time: 5 minutes (15minutes if dicing meat manually)
Cooking Time: 1:45 minutes (slow cook)
1kg diced beef
500g minced beef (optional)
4 tbsp oil
3 large onion
3 red bell pepper
1 green bell pepper (optional)
3 tbsp ground black pepper
2 heads of garlic crushed and chopped
15 chopped fresh chillies (or 3 tbsp hot chilli powder adjust as desired)
3 tbsp paprika
3 tbsp ground cumin
1½ tbsp dried marjoram
3 beef stock cubes
5 cans of 410g chopped tomatoes
6 tbsp tomato purée
5 cans of 410g can red kidney beans (drained)
3 tbsp sugar
3 tbsp Salt or adjust to desired taste
Pint of water (or until it levels the meat)
Here's How
STEP 1: Prepare the meat and vegetables
Dice the meat.
Chop onions into small pieces (best soak onion in water after you have peeled for like 10 minutes to avoid teary eyes reaction while chopping)
Crush and chop garlic (uneven is fine)
Cut red bell pepper in fine cubes, do the same for the green bell pepper.
Chop fresh chillies.
You can measure all other ingredients now too for smoother process, otherwise you can do the measuring along the way.
STEP 2: Start cooking.
Use a deep sauce pan, put your pan on the hob over a medium heat.
Add oil and leave until hot.
Add the garlic cook until slightly brown,
Add onion and cook, stirring fairly frequently, for about 3 minutes, or until the onion is soft, and slightly translucent.
Add fresh chopped chilli (or chilli powder)
Add ground pepper
Add Red bell pepper followed by the green bell pepper
Drop in the beef cubes give it a good stir then let it simmer until the vegetable is cooked.
STEP 3
Add the meat, stir then pour-in a pint of water or just to level with the meat, this will help cook the meat until tender
stir and cover, leave it slow cook for 30 minutes or until the diced meat is tender, keep stirring every 10 to 15 minutes to stop the bottom from burning
STEP 4
Add the minced meat, stir and cover for another 30 minutes, keep stirring every 10 to 15 minutes.
Add the red kidney beans, followed by the caned chopped tomatoes.
Cover for 10 minutes and stir occasionally
STEP 5
The mixture is now getting heavier, frequent stirring is a must atleast every 5 minutes.
Adjust the heat to low heat
Add the tomato puree, followed by all dry ingredients in no particular order; paprika, cumin, marjoram, sugar and salt, stir well. This time you must leave it cooking without the lid so the sauce will reduced and thicken in time.
Keep stirring every 5 minutes for another 30 minutes or until the sauce is reduced and thick.
STEP 6
Turn off the heat.
Let it set for 10 or more minutes before serving or pack for your lucky neighbours.
Step 7
Serve with boiled rice or Baked potato with butter and cheese.
You can also top shredded cheese or sour cream for maximum flavour explosion.
