How To make Bread Dumplings(Sourdough)
2 c Sourdough batter -- proofed
1 c Milk
3 lg Eggs
6 c Flour, all-purpose
2 tb Baking powder
1 1/2 ts Salt
6 Toast slices -- cut in cubes
Recipe by: Randy Pollak In a very large mixing bowl combine flour, baking powder, salt and toast cubes; mix well. In a medium bowl beat eggs slightly; add sourdough batter and milk. Stir until well combined. Pour batter mixture into flour mixture and mix dough until smooth. Divide dough into four equal pieces and shape each piece into small rectangular loaves. Set on wax paper, cover with plastic wrap and then a dish towel. Allow dough to rest for at least 1 hour. Prepare a large Dutch oven by placing a vegetable steamer inside and add water until it comes to just below the steamer. Cover and bring to boil. Reduce heat but it must be high enough to create steam. Place 1 or 2 (depending on size as loaves will better than
double in size) loaves unto steamer and for about 20 minutes or until a toothpick inserted into center of loaf comes out clean. Four loaves is enough for about 12-16 servings. Note: Dumplings may also be boiled, in
which case you must cut each loaf in half; however steaming produces larger and lighter dumplings. If you wish you may refrigerate dumplings until cold carefully slice and wrap in plastic wrap then foil and freeze.

Sourdough Spinach Dumplings (Spinatknödel)
This is how you can use your stale bread to make super delicious sourdough spinach dumplings. In Germany they are known as Spinatknödel.
I first started to love them when I went to Alto Adige (South Tyrol) and figured I'd share you one of my favourite recipes with step by step instructions.
You can take any bread from a couple of days ago. It is an excellent way to use your bread. I provided the recipe with % values calculated based on the bread that you have available. That way you can scale up and down depending on how much bread you have available.
Sourdough Wonton Wrappers Recipe | Resep Kulit Pangsit Sourdough
Sourdough Wonton Wrappers
120 grams/½ cup sourdough starter at 100% hydration
24 grams/1½ tbsp water
¼ tsp salt
120 grams/1 cup all-purpose flour (more for rolling)
Cornstarch for sprinkling
1. Knead all ingredients until thoroughly hydrated. Cover and rest for 1 hour.
2. Roll out dough with rolling pin/pasta roller into 1/16 inch or 1½ mm thickness. If needed, sprinkle with more flour as you roll. Cut into 4 inch/10 cm squares.
3. Dust with cornstarch before stacking to prevent sticking. Store in airtight container in the fridge/freezer.

Kulit Pangsit Sourdough
120 gram sourdough starter dengan hydration 100%
24 gram water
¼ sdt garam
120 gram terigu protein sedang (ditambah untuk proses penggilasan)
Maizena untuk taburan
1. Uleni semua bahan sampai lembab merata. Tutup dan diamkan 1 jam.
2. Gilas dengan rolling pin/gilingan mie sampai ketebalan 1½ mm. Bila perlu, taburi adonan dengan tepung saat penggilasan. Potong2 menjadi bujur sangkar ukuran 10 cm tiap sisinya.
3. Taburi maizena sebelum ditumpuk supaya tidak lengket. Simpan di wadah kedap udara di kulkas atau freezer.
