How To make Broiled Chicken with Fettuccine
3/4 Cup julienned seeded vine-ripened tomato
1/4 Cup thinly sliced sun-dried tomatoes
oil packed
1/2 Cup thinly sliced red onion
1/4 Cup finely chopped seeded jalapeno
1 Tablespoon drained green peppercorns
1 1/2 Teaspoons finely chopped garlic
1 Tablespoon fresh lemon juice
1/2 Teaspoon salt
1/2 teaspoon freshly ground black pepper
1 whole skinless boneless chicken breasts :
halved
1/4 cup olive oil -- plus additional
6 ounces fettucine
1/2 cup heavy cream
2 tablespoons brandy
2 tablespoons chopped fresh basil leaves
Preheat broiler.
In a bowl stir together tomatoes, onion, jalapenos, peppercorns, garlic, lemon juice, salt and pepper,reserve.
Brush each chicken breast half with olive oil,season to taste with salt and pepper.Broil chicken about 4 inches from heat 4 minutes on each side, or until just cooked through. Reduce temperature to 200F. and keep chicken warm in oven.
Cook fettuccine until al dente.Drain well and keep warm.
In a large non-stick skillet heat the olive oil over moderately high heat. Saute reserved tomato mixture for 1 to 2 minutes stirring constantly.Stir in cream and brandy and simmer until thickened slightly. Add fettuccine and basil to the sauce and and stir.
Divide fettuccine and sauce between 2 plates and top with chicken.

250g chicken

1 lb Mafaldine Noodles (or penne)
1 onion
1 red bell pepper
1 green bell pepper
3-4 cloves roasted garlic
1 can Chipotle Peppers in Adobo (Just the sauce)
2 - 2.5 cups heavy cream
1/4 cup pasta water
1 cup shredded parmesan cheese
1.5 cups grated parmesan cheese
salt, pepper, garlic, onion powder, cayenne pepper, red pepper flakes
2 tbsps butter (for sauce
2 tbsps butter (optional to baste chicken)
1 lb chicken breast
avocado oil
parsley
Directions:
Prepare your roasted garlic but adding oil, salt and pepper. and wrapping in foil. Place into the oven at 400 degrees for 40 minutes.
Boil noodles in salted water per package directions (remove about 1-2 minutes early so the noodles can finish cooking in the sauce).
Season chicken with your favorite seasoning combination. Heat cast iron skillet over medium high and add avocado oil. Sear chicken for 1-2 minutes per side and then finish in the oven at 400 until the chicken registers 165 degrees internal temp. (optionally baste with butter before the oven)
Start your sauce by adding butter to a skillet and saute your onions and peppers. Once the veggies soften, add garlic. Next, add heavy cream and bring to a boil and then reduce to a simmer. Add in chipotle sauce and cheese. Mix until cheese melts and combines into the sauce and season to taste. Add drained pasta noodles to the sauce and mix to combine. Add 1/4 cup pasta water as needed to thin the sauce if it is too thick. Slice chicken and place on top of the pasta and garnish with chopped parsley.

This is my AMAZING Cheesy Pasta Bake With Chicken And Bacon – a family favourite (and it makes great leftovers too!). If you like pasta recipes then this chicken pasta bake with bacon is one for you.
This recipe has been a reader favourite for the last couple of years and a family favourite for longer than that. I absolutely love cooking (and eating) this pasta bake!

Ingredients for the Chicken Pasta Bake with Bacon:
400g (4.5 cups) dried pasta shapes (I used rigatoni)
1 tbsp vegetable oil
3 large chicken breasts cut into bitesize chunks
1 large onion peeled and chopped
1 red bell pepper de-seeded and chopped
1 yellow bell pepper de-seeded and chopped
A pinch of salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
2x 400g (14oz) tins of chopped tomatoes
120ml (1/2 cup) double (heavy) cream
100 g (3 packed cups) fresh baby spinach
6 rashers cooked bacon chopped
100g (1 packed cup) strong cheddar cheese grated
100g (1 packed cup) mozzarella grated
Small bunch parsley roughly torn
