NuWave Cooking Club - Beef Bourguigon
Ingredients:
-4 lbs round beef cut in 2inch cubes
-6 slices of bacon cut into lardons
-1/2 C flour
-1 herb bouquet (parsely, thyme and bay leaf tie up with a piece of butcher twine)
-2T tomato paste
-1 large carrot peeled and diced
-1 large onion diced
-3.5C beef stock
-18-24 pearl onions
-3.5T butter
-1 lb fresh mushrooms quarted
-sea salt fresh ground black pepper
-olive oil
-2C red wine
Directions:
Set your pressure cooker at SEAR and add your bacon, until cooked and crispy. Meanwhile season your beef with black pepper and flour. take out your bacon and set aside in the bacon fat sear your meat you might have to do batches. And put them on the side.
Add your butter and olive oil with diced carrots and onions sautee. Set them on the side. Add your fresh pearl onions with the herb bouquet once your pearl onions are golden add back your diced mixtureand beef.
Add your tomato paste and mix well get all your ingredients covered with your tomato paste. Pour in your beef stock mix well and finally add your beef stock. Close your lid and using your preset buttons on the pressure cooker BEFF set time for 30 minutes.
Once done do a Quick Release on the pressure then open your lid and check your meat if it needs an aditional 15 minutes set your pressure cooker again, other wise you can set your pot as a crock pot for an hour or 2 and it will finish cooking until your ready to serve it.

Instant Pot Pasta with Cherry Tomato Sauce and Parsley
I N G R E D I EN T S
⅓ cup extra-virgin olive oil, plus more to serve
4 medium garlic cloves, thinly sliced - I used Trader Joes frozen, minced
¼ teaspoon red pepper flakes
2 bay leaves
2 pints cherry or grape tomatoes, halved (2 pounds total)
1 teaspoon white sugar
1/4 cup chopped flat-leaf parsley
1 Tablespoon Kosher salt
1 pound bucatini or spaghetti pasta, broken in half
1 teaspoon smoked paprika
3 cups of water
Pecorino Romano cheese, shaved or finely grated, to serve
I N S T RU C T I ONS
START: On a 6-quart Instant Pot, select More/High Sauté. Add the oil and heat until shimmering. Add the garlic, and bay, then cook, stirring, until the garlic is light golden brown, about 2 minutes. Stir in the tomatoes, pepper flakes, sugar, 1 tablespoon salt, smoked paprika and 3 cups water. Add the pasta, placing the strands horizontally so they lay flat, then press them into the liquid until submerged.
FAST: Press Cancel, lock the lid in place and move the pressure valve to Sealing. Select Pressure Cook or Manual; make sure the pressure level is set to High. Set the cooking time for 8 minutes. When pressure cooking is complete, quick-release the steam by moving the pressure valve to Venting. Press Cancel, then carefully open the pot. (I like to place a towel over the vent)
FINISH: Using tongs, toss and stir the mixture to separate the strands of pasta, toss with parsley, grate fresh pecorino romano on top and serve.
Seafood and Parsley Pesto Pasta #shorts
Serves 4
-Ingredients:
-Oil
-450g seafood
-Sea Salt
-Pepper
-Butter
-110g Pasts of choice
-30g Parsley
-20g walnuts
-150g Cherry Tomatoes
- Half a Red Onion
- Cook pasta according to the instructions given, then drain and set aside to cool. If possible, place in the fridge to chill.
- Cover a plate with 1-2 paper towels and place the sefood on them. Let them rest for about 5 minutes, then thoroughly pat them dry with another paper towel. Add a pinch of sea salt & pepper to them on both the top and bottom.
- Set a carbon steel skillet on medium high heat. Once hot, add avocado oil and place the seafood in the skillet, and cook until desired.
- Once the seafood has cooked, remove the skillet from the heat and add 1 tablespoon of butter to the skillet, slowly spooning the butter over the seafood.
- In a large bowl or jar (or blender), add the ingredients for the pesto. Use an immersion blender to blend up all the ingrediens, or finley dice and mix.
- Add the pasta and pesto to a large mixing bowl and fold to mix/coat well. Add the tomato and red onion and lightly toss together. Lastly, fold in the seafood
