Brownie Cheesecake Bars
Makes 16 bars
Ingredients
Brownie
• 1 stick unsalted butter, melted (113 g)
• 1 cup granulated white sugar (200 g)
• 2 large eggs
• ½ tsp vanilla extract
• ⅓ cup unsweetened cocoa powder (33 g)
• ½ cup all-purpose flour (60 g)
• ¼ tsp baking powder
• ¼ tsp salt
Cheesecake
• 16 oz. cream cheese, softened (453 g)
• ⅓ cup sugar (67 g)
• ½ tsp vanilla
• 2 large eggs
Chocolate Ganache Glaze
• ¼ cup heavy cream (60 mL)
• ½ cup dark chocolate (50 g)
Preparation
Brownie
1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
2. In a large bowl, melt butter with a microwave. Whisk in sugar until well combined. Mix in the eggs and vanilla extract.
3. In a separate bowl, combine cocoa powder, flour, baking powder, and salt. Sift in the flour mixture and fold it into the wet ingredients until combined.
4. Evenly spread the batter in the baking pan and bake for 25 minutes or until the top is shiny and the batter is set. Let the brownie cool on a wire rack.
Cheesecake
1. Let the temperature of the oven drop and preheat to 325°F (163°C).
2. Beat cream cheese, sugar, and vanilla.. Add eggs and beat the mixture just until well combined.
3. Pour over the brownie and bake for 40 minutes or until the cheesecake is almost and cooked through.
4. Cool on a wire rack and refrigerate for 2 hours before topping with chocolate. Cool for another hour if necessary before cutting.
Glaze
1. Place chocolate and heavy cream in a small bowl and microwave at 30-second intervals, stirring until well-combined. Let it sit at room temperature until it slightly thickens.
2. Transfer to a small ziplock or piping bag and snip a very small hole. Drizzle ganache over the cheesecake layer.

Red Velvet Cream Cheese Swirl Brownie
The perfect end to any Christmas feast, these Red Velvet Cream Cheese Swirl Brownies are sure to impress your family and friends. They not only look and taste great, they're real easy to make. And the best part is, you don't only have to make them at Christmas! ????
Ingredients:
(Yields: One 7×7” square)
Red Velvet Brownie batter:
1/2 cup (120g) unsalted butter, room temperature
3/4 cup (180g) sugar
2 eggs
1 cup (120g) flour
2 tbsp cocoa powder
1/4 tsp salt
1 tbsp red food colouring
1 tsp distilled white vinegar
1 tsp vanilla extract
Cream Cheese batter:
240g cream cheese, room temperature
1 egg
45g sugar
1 tsp vanilla extract
Method:
- Line a 7 square baking tin with parchment paper and preheat oven to 170C/340F.
- Cream butter and sugar together with a mixer until pale and creamy.
- Beat in one egg at a time.
- Mix in red food colouring, vinegar and vanilla extract until well combined.
- Sift flour, cocoa powder and salt together. Fold in sifted mixture gently.
- Reserve ¼ cup of red batter and pour the rest into lined tin.
- With a clean mixer, beat cream cheese and sugar until smooth.
- Mix in egg and vanilla extract until well combined.
- Pour cream cheese batter on top of red brownie batter and then dot the top with reserved red batter.
- Using a knife, create swirls in the top layer being careful not to disrupt the bottom layer.
- Bake in preheated oven for 30 minutes until brownie has set.
- Cool and refrigerate before serving.

Equipment
Hand mixer
9x9-inch pan
Ingredients
For the brownie base (see package)
brownie mix about 18 ounces
eggs room temp & lightly beaten
water sub:milk, buttermilk, or coffee
oil (canola, olive, or other vegetable oils)
½ teaspoon instant coffee or ¼ teaspoon espresso powder optional
Extra ingredients
8 ounces cream cheese softened
¼ cup granulated sugar
a pinch of salt
½ teaspoon vanilla extract
1 egg at room temperature
Instructions
1. Using a hand mixer, beat the cream cheese, sugar, a pinch of salt, and vanilla extract at medium-low speed until smooth.
2. Add the egg and mix until combined. Set it aside.
3. Make the brownie batter as directed in the package and spread it on a 9x9-inch pan.
4. Add dollops of cheesecake batter to the brownie batter. Create swirls using a knife or a chopstick.
5. Bake according to package instructions, plus a few minutes longer if needed. The cheesecake is done when the center is set and no longer wet. Insert a toothpick into the brownies to check.
6. Let it set for at least an hour in the fridge before cutting.
