Buckwheat Pancake
Pancakes are favorites across the world. In this Indianised version, the not-so-common buckwheat combines with sour low-fat curds and bottlegourd to make iron and fibre-rich pancakes. Have it along with tangy carrot garlic chutney or green chutney for a delicious treat.
Preparation Time: 10 minutes.
Cooking Time: 20 minutes.
Soaking Time: 1 hour.
Makes 8 pancakes.
1 cup buckwheat (kutto or kutti no daro), washed and drained
¼ cup sour low-fat curds (dahi)
1 tsp ginger-green chilli paste
2 tbsp finely chopped coriander (dhania)
A pinch of turmeric powder (haldi)
A pinch of asafoetida (hing)
½ cup grated bottle gourd (doodhi / lauki)
Salt to taste
2 tsp oil for greasing and cooking
1. Combine the buckwheat and curds along with 2 tbsp of water in a deep bowl, mix well and cover and keep aside to soak for 1 hour.
2. Blend the buckwheat-curds mixture to a coarse mixture without using water.
3. Transfer the coarse mixture to a deep bowl, add the ginger-green chilli paste, coriander, turmeric powder, asafoetida, bottle gourd, salt and 1 tbsp of water and mix well. Keep aside.
4. Heat a non-stick tava (griddle) and grease it using ⅛ tsp of oil.
5. Pour a ladleful of the batter on it and spread in a circular motion to make 100 mm. (4”) thick round.
6. Cook, using ⅛ tsp of oil, till it turns light brown in colour from both the sides.
7. Repeat the steps 4 to 6 to make 7 more pancakes.
Serve immediately.

A nice change from pancakes for Sunday breakfast. This is an old French Acadia breakfast from my childhood. Best served with ham steaks and eggs. Give this a try and add fruit if you wish. Serve with melted butter or margarine and warm molasses.Buckwheat flour is the star of this recipe. If you haven’t tried baking with buckwheat flour yet I highly recommend giving it a try. Buckwheat flour is one of my favourite gluten-free flours because it adds a satisfying texture and an earthy flavour without any hint of that “gumminess” that sometimes plagues gluten-free baked goods. It’s also quite nutrient-rich.

To make Buckwheat cake:
• In a bowl, add
90 grams buckwheat flour,
40 grams whole wheat ftour,
45 grams crushed oats,
pink salt to taste,
1 tsp baking powder,
1/4 th cup ground almonds & whisk together.
• In a separate bowl, add
90 ml extra virgin coconut oil,
90 gms brown sugar
& whisk for 7-8 minutes.
• Add 2 eggs & mix well With the batter.
• Add 1 tsp Vanilla essence,
3 tbsp warm milk & mix well.
• Combine wet & dry
ingredients together
& MM 1/ 4 cup apricots & mix again.
• Spread the cake batter in on tray lineal with butter paper.
• In a preheated oven, bake the cake at 180°C for 45 minutes.
• Once baked, brush the cake With honey & cinnamon & let cool for 10 minutes.
• Once cooled, cut & enjoy.

Italian Buckwheat Flour Cake: gluten-free (torta di grano saraceno)
This Italian buckwheat flour cake (gluten-free) is a nutty sponge-like cake filled with jam between the layers. Traditionally this buckwheat flour cake is from the Alpine region of Italy where the locals speak German. The name in German is Buchweizentorte and in Italian; Torta di Grano Saraceno, this is one of the most famous cakes in the area (alto Adige), a nutty buckwheat sponge filled with berry jam (usually raspberry, blueberry or blackcurrant).
This buckwheat recipe can be made with ground almonds or ground hazelnuts and in true Italian style sprinkled with a veil of icing sugar. To achieve the perfect moist buckwheat flour cake I have made this cake both with Greek yoghurt or a grated apple depending on what I have on hand.
I love this cake as a breakfast cake or an afternoon treat.
Takes = 15 mins prep.
Bakes = 45 mins
Makes = 20cm round
