How To make Buttermilk Pancakes w/ Blueberry Sauce
1 c Blueberries
2 tb Sugar
1 1/2 ts Cornstarch
1/4 c Water
1 ts Lemon Juice
1/2 c Whole-Wheat Flour
1/4 c Flour
1 ts Baking Powder
3/4 c Non-Fat Buttermilk
1/4 c Egg Substitute Product
2 tb Honey
Blueberries can be fresh or frozen. To make blueberry sauce, in a small saucepan, combine blueberries, sugar and cornstarch. Stir in water and lemon juice. Cook over medium heat, stirring constantly until mixture and sauce thickens. Set aside. To make pancakes, in a medium bowl, combine flours and baking powder. In a small bowl, combine buttermilk, egg product and honey. Stir buttermilk mixture into flour, stirring until smooth. Preheat non-stick skillet, sprayed with vegetable oil spray, over medium heat. Pour batter in skillet to make six small pancakes. Cook until bubbles break on the surface. Turn and cook until golden brown. Serve with blueberry sauce. Calories 361 Fat 1g. Buttermilk Pancakes with Blueberry Compote - How to make Fluffy Buttermilk Pancakes
Here is a recipe I have been using for years! Both the pancake and blueberry compote are extremely delicious and very easy to make!
Buttermilk Pancakes
1 1/2 Cups of Milk
1/4 Cup of White Vinegar
2 Cups of All Purpose Flour
1/4 Cup of White Granulated Sugar
3 Teaspsoon of of Baking Powder
1 Teaspoon of Baking Soda
1 Teaspoon of Salt
2 Eggs
(Cooking spray for griddle)
Blueberry Compote
1 1/2 cups of Blueberries (Fresh)
1/4 Cup of White Granulated Sugar
1/4 Cup of Water
2 Teaspoons of Lemon Juice
*Note* If the compote thickens while it rests, you can add in water 1 TB at a time until you reach your desired consistency.
Blueberry Buttermilk Pancakes w/ Blueberry Sauce
For the pancakes:
Wet ingredients:
1| Egg
3/4 c | Buttermilk
1tbs | Milk
2 tsp | Vanilla extract
1 1/2 tbs | Butter, melted
Dry Ingredients:
3/4 c| All-purpose flour
1/4 tsp | Salt
1/4 tsp | Baking Soda
1 tsp | Baking powder
1 tbsp| Sugar
1/2 c | Blueberries (Fresh/frozen)
You will also need cooking spray and/or butter to coat the skillet/griddle
Topping: Blueberry Sauce
1 c | Blueberries
1/2 c | Orange Juice
1/3 c. | White Sugar
1 tsp | vanilla extract
Pinch of cinnamon
1 1/2 tbsp | Cornstarch
Water
* to make the topping combine 1 cup of blueberries 1/2 a cup of orange juice 1/3 cup of sugar in a Sauce pan and bring to a boil. Stir making sure that the sugar completely melts. Remove from heat. Combine 1/8 cup of water with the corn starch in a separate cup and stir to combine the two ingredients. Then add to the sauce pan with the blueberry mixture. And stir.
