Moist Swedish Apple Cake with spelt flour: Äppelkaka
In this video and recipe, I am sharing my take on a Swedish apple cake (Äppelkaka). My moist apple cake recipe includes; white spelt flour and sliced fresh apples (either red or green) and a hint of spice. I love apple cakes and this one has been inspired by various recipes I have seen and created before. Traditionally this Swedish Apple cake is made using a recipe handed down by an aunt or grandmother and the apples are only for the top, my version has a layer of apples in the middle for extra deliciousness and moisture. This cake is perfect for serving at afternoon tea or Fika as it's called in Sweden. In the video, I am using Swedish red apples.
There are other Swedish apple cakes with more apples and bread crumbs with and without spices. I am yet to try this but thought I need to share another apple cake as the apples are now coming into season here for Autumn in the northern hemisphere. We don't serve this with cream or custard, as we prefer this on its own. However, feel free to serve with your favourite cream, custard or ice cream. The apple cake lasts about 2-3 days in a container on the bench. I freeze a few cut slices on the first day once cooled then they're the perfect treat to grab and take on a picnic or day trip.

* Butter softened – 125g, 4.4oz (1/2 cup + 1 tbs)
* White Sugar – 150g, 5.3oz (3/4 cup)
* Spelt Flour (white or wholegrain) – 250g, 8.8oz (about 1 & 1/2 cups)
* Baking powder – 2 teaspoon
* Baking soda (bicarb soda) – 1/2 ts
* Ground cardamom (optional) – 1/2 teaspoon
* Ground cinnamon – 1 teaspoon
* Salt (optional) – 1/8 teaspoon
* Vanilla sugar (or vanilla extract) – 1 teaspoon
* Large eggs – 2
* Milk Oat or soya milk – 150ml, 5.1oz (3/4 cup)
* Green or Red Apples – 2 sliced or 4 smaller red ones
* White sugar (for the top) – 1 teaspoon

This Apple Crisp recipe is the ideal cozy fall dessert! It's loaded with fresh sliced apples and topped with a crisp and buttery cinnamon oat topping. It's completely irresistible served with a scoop of vanilla ice cream.

Ingredients
4 lbs firm-crisp apples, 11-12 medium apples*
2 Tbsp lemon juice
3/4 cup granulated sugar, or to taste**
3 Tbsp all-purpose flour
1 1/2 tsp cinnamon
For the Crumb Topping:
1 3/4 cups flour
1/2 cup packed brown sugar
1/4 cup granulated sugar
1/2 tsp cinnamon
1/4 tsp salt
1 cup unsalted butter, (room temperature), plus more to butter pan
1 cup rolled oats, or old fashioned oats

Ingredients:
230 g rolled oats(2 1/2 cups)
7 g baking powder(1/2 tablespoon)
1/2 teaspoon cinnamon
2 medium apples
3 eggs
1 teaspoon vanilla extract
40 g dried cranberries (optional) 1/4 cup
a pinch of salt
26 x 10 cm/ 10 x 4 inches baking form
bake 35-40 minutes at 180°C/360°F

Day 5! Whole Wheat Applesauce Cup Cakes!

Here is the recipe!
WHOLE WHEAT APPLESAUCE CAKE OR
CUPCAKES
1/2 c. oil
3/4 c. granulated brown sugar
1 c. applesauce
1 1/2 c. unsifted whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. raisins (optional)
Oil and flour an 8 inch round or square baking pan or muffin tins. Cream the oil and sugar together and mix in the applesauce and baking soda. Add flour and cinnamon, blending thoroughly. Pour the batter into pan or make individual cakes in muffin tins. Bake at 375 degrees for 30 minutes for an 8 inch cake; about 20 minutes for cupcakes.

8 apples
1/8 - 1/4 teaspoon of cinnamon
1/4 cup of water
Directions
-Peel and core apples then chop them into squares
-put about 1 cup of water into pot and boil
- add apples to pot and turn heat to LOW
-let apples cook/steam add cinnamon cook for 45 minutes
- when apples are soft, smash them
- add 1/4 cup of fresh lemon juice to smashed apples
-stir everything together and walah!!! YUM!

Moist and Decadent Spice Cakes - Simple and Easy
This moist and decadent cake is one of the nicest I have ever tasted. Believe me, your family and friends will say Where did you buy this cake? They will be shocked, unless they know you're an experienced baker, that you made it from scratch. It is so easy to make, even if you don't have the right spices on hand. Inevitably, I always make this up for the Holidays, and it's always a hit.
The one drawback to this wonderful cake is that it involves quite a few spices. If you don't have them on hand, however, you can always improvise. For example, the recipe calls for allspice, which many people don't have in their spice rack, but you can use a pumpkin spice or simply leave it out. The same applies to many of the spices and the outcome will be equally as good. The spice cake will be, soft, moist, and ever so decadent.
Once you have the cake made, apply the delicious buttercream frosting, which we show you how to make, and the outcome is totally out of this world.

Ingredients:
1/4 tsp of salt
2 tsp of ground ginger
1 tsp of ground cinnamon
1/2 tsp of nutmeg
1/2 tsp of pumpkin spice or all spice
1/2 tsp of ground cloves
2 1/2 cups of all purpose flour
1/4 cup of corn starch
2 tsp of baking powder
1 cup of milk - 2 percent is fine
3 eggs
2 tsp of vanilla extract
1 cup of partially unsalted melted butter - 230 grams
1 1/2 cups of packed brown sugar
1 cup of crushed walnuts or pecans
2 cinnamon stick if desired for decorations
For the Butter Cream Frosting:
2 cups of confectioner's or powdered sugar
1/2 cup of semi melted butter
2 tsp of vanilla extract
1 or 2 tbsp of milk if necessary
Method:
Preheat your oven to 350 degrees F or 177 C.
Add the flour, corn starch, baking powder, and spices to a mixing bowl. Whisk until well combined.
Add the milk, eggs, and vanilla extract to a smaller bowl. Again, whisk until well incorporated.
Mix the dry ingredients and butter over low speed, then change to medium, until a pebbly crumbly mixture forms.
Add in the milk mixture 1/3 at a time while continuing to mix until a smooth mixture forms.
Add in the brown sugar and mix until just combined.
Place the walnuts in and, using a spatula, fold together.
Spray and nine by thirteen baking pan with spray and line the bottom with parchment paper.
Add the cake mixture in and smooth out.
Place in the oven and bake for about 25 minutes or until a toothpick comes out clean.
Remove from the oven and allow to cool.
In the mean time, make the frosting by combining the sugar, vanilla extract, and butter. Mix until smooth and creamy. Add some milk if it's too thick.
After it cools, place a wire rack over the baking tray and flip the cake over onto it.
Cut the cake in half and frost the one side.
Frost the top and spread a few more walnuts over the top. I place a couple of cinnamon sticks on for decorations too.
Slice and enjoy your moist and decadent spice cake.
