INGREDIENTS
1½ cups of all-purpose flour
1½ teaspoons of baking soda
¾ teaspoon of kosher salt
¼ teaspoon each of cinnamon, cloves, allspice, nutmeg (optional)
4 tablespoons of butter, room temperature
1 packed cup of light brown sugar
3 tablespoons of mascarpone cheese (or yoghurt or sour cream)
2 eggs, room temperature
½ teaspoon of pure vanilla extract
4 ripened bananas, peeled and mashed
½ cup of chopped walnuts
INSTRUCTIONS
1) Preheat oven to 350°F. Lightly grease a glass or metal loaf pan and line with parchment paper.
2) Whisk dry ingredients together and set aside. Mash peeled bananas and set aside.
3) Using a hand mixer, cream butter, sugar and mascarpone together in a medium-sized bowl until light and fluffy. Add eggs and vanilla and mix until well combined. Add dry ingredients, then banana, mixing well after each addition. Gently stir in chopped nuts.
4) Spoon loaf mixture into prepared pan and transfer to oven. Bake for 60 minutes or until a cake tester comes away clean from the centre.
5) Allow loaf to cool in the pan for 1 hour before removing it. Slice and serve.

Mushroom Stalks - 10
Salt - to season
Chat Masala - 1/2 tsp
Garam Masala - 1/4 tsp
Black Pepper Powder - 1/2 tsp
Red Chili Flakes - 1/2 tsp
Coriander Leaves - 1 tbsp
Cumin Powder - 1/2 tsp
Cheese - 50g
For Crunchiness:
Maida & Corn Starch - 3 heaped spoons each
Salt - to taste
Water - to make a batter
Bread Crumbs - 1 cup (mixed with 1 tbsp chili flakes)
Oil - to fry
