How To make Cheese Scalloped Potatoes/Carrots
2 cups water
2 teaspoons salt
optional
2 pounds potatoes (5 cups, pared and thinly sliced)
1 1/2 cups sliced onion
5 medium carrots (2 cups, pared) :
diagonally sliced
CHEESE SAUCE: 3 Tablespoons butter
2 Tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
Dash cayenne 1 1/2 cups milk
1 1/2 cups grated sharp cheddar cheese
In large saucepan, bring water and salt to a boil. Add potatoes, onion and carrots; cook, covered, for about 5 minutes or until partially tender. Drain. Make cheese sauce by melting butter in small saucepan. Stir in flour, salt, pepper and cayenne, stirring constantly, about 1 minute. Remove from heat; stir in milk and blend well. Brin mixture to boil over medium heat, stirring until thick and smooth. Add 1 cup cheese; stir until melted. Layer half of vegetables in greased 2 1/2 quart casserole; top with half of cheese sauce. Top with remaining cheese. Bake, covered with foil, at 375 for 30 minutes. Foil may be removed for last 10 minutes to brown top. Yield 6 servings.

Garlic Parmesan Scalloped Potatoes and Carrots
These Scalloped Potatoes and Carrots are the ultimate comfort food! An easy side dish perfect for Thanksgiving or any holiday.

Serves: 8
Ingredients:
1/4 cup butter
1/2 medium onion, diced
1 tsp garlic, minced
1/4 cup all-purpose flour
1 cup low sodium chicken broth
3/4 cup heavy cream (30-35%)
3/4 cup 1% milk
1 1/2 cups freshly grated Parmesan cheese, divided
1/4 cup fresh chives, chopped
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 1/2 lbs Baby Boomer Little Potatoes, thinly sliced
3 large carrots, peeled and thinly sliced
Directions:
1. Preheat oven to 400°F and lightly grease a 9×13″ pan or casserole dish.
2. In a large skillet, melt butter over medium heat. Add onion and cook until starting to brown. Stir in garlic and cook one minute.
3. Sprinkle in flour, cook and stir until combined (you shouldn’t see any flour left).
4. Whisk in broth, cream and milk, and continue cooking and stirring over medium heat until thickened. Stir in 1 cup Parmesan cheese, chives, salt, and pepper.
5. Combine potatoes and carrots in prepared pan and pour sauce over top, spreading evenly. Sprinkle with remaining 1/2 cup Parmesan cheese, cover with foil and bake at 400°F for 50-60 minutes until potatoes and carrots are tender.
6. Uncover and broil until top is lightly browned. Let sit for 10 minutes before serving (will continue to thicken as it sits).

Place the potato into the dish
Pour 150ml into a pan
Pour 150ml cream into the pan
Chop 2 cloves of garlic
Add to the pan
Salt and black pepper
Pour on top of the potatoes
Bake for 30 minutes at 150°C/300°F
80g mozzarella cheese
After 30 minutes
Sprinkle the cheese on top
Bake for another 15-20 minutes at 180°C/356°C
Sprinkle parsley on top (optional)
