Ingredients to make a Turkish Menemen: (3-4 serving)
2-3 tbsp olive oil
1 tbsp butter
3-4 sweet or mild hot green peppers
2 medium to big size ripen tomatoes
about 1/3 cup white Turkish feta cheese or similar kinds you can find
3-4 eggs
salt, red pepper flakes to season

Savory Stuffed Tomatoes - Easy and Delicious
Stuffed tomatoes are a delicious beef steak tomato with the tops cut off and the flesh removed. They are then stuffed with a combination of Italian sausage, or the sausage of your choice, onion, minced garlic, pepper, rice, and mozzarella cheese. Extra ingredients can be added to the stuffing if you wish. For example, bell peppers and mushrooms would not go amiss. Lastly the tomatoes are topped with a butter, bread crumb, and mozzarella mixture. Pop these back into the oven for a few minutes to brown and heat, garnish with some fresh parsley, and you are ready for a delicious treat.

Ingredients:
3 large beef steak tomatoes
3 sausages with casing removed
1/2 of a small chopped onion
1 tsp of minced garlic
1 cup of pre-cooked rice
pepper to taste
For the Topping:
2 tbsp of melted butter
1/2 cup of panko bread crumbs or the bread crumb of your choice
1/4 cup of mozzarella

Method:
Preheat your oven to 350 F 177 C.
Cut the tops off the tomatoes and remove the flesh. Set them aside on a dish sprayed with baking spray or butter.
Heat a pan over medium high heat. Place the sausages in, break them up, and fry them until browned.
Put the onion in and fry until it is translucent. Add in the garlic and fry for a minute or so until fragrant. Then place the rice and pepper in, stir and cook until heated through.
Spoon the mixture into each tomato.
Add the butter, bread crumbs, and mozzarella to a bowl and mix until well combined. Spread the topping over the mixture.
Place the tomatoes into the oven and bake for 15 to 20 minutes until the bread crumbs are browned.
Serve and enjoy your stuffed tomatoes.

My favorite casserole recipe includes baked tomatoes and goat cheese served over pasta with fresh basil, garlic, Parmesan cheese, olive oil, pepperoncini, and capers.
Serve this baked tomato with cheese recipe over pasta or on toasted bread (bruschetta or crostini).
Serving Size: 6
Ingredients:
-2 ½ cups (~10 oz) cherry tomatoes, quartered
-4 medium pepperoncini, sliced (Use less if you are sensitive to heat)
-1 ½ Tbsp capers, drained
-1 Tbsp garlic, minced & sautéed
-2 Tbsp e.v. olive oil
-1.5 oz (~ ⅓ cup) chèvre (goat cheese), crumbled
-3 Tbsp Parmesan cheese, grated
-pinch black pepper
-¼ cup fresh basil, chiffonade (sliced)
Instructions:
-Preheat oven to 400F.
-Mix all the ingredient in a bowl or baking dish
-Bake at 400F uncovered ~25-30 minutes or until you can see that the dish is hot and boiling. Turn on the broiler for a couple minutes (watching carefully, you don't want it to burn!) if you want the top to brown.
-You can use this as a dip, on crostini, or toss it with some pasta.
-Add salt to taste.

Uncovered. It really doesn't matter, but uncovered will reduce and concentrate flavors in the roasted tomato bake and also brown up and caramelize some of the edges of the ingredients on top and that creates flavor.
