How To make Cherry Almond Glazed Pork Roast
Posted by Stewart Hopper - 4 lb Boneless pork roast
Salt and pepper 1 12 oz jar cherry preserves
1/4 c Red wine vinegar
2 tb Light corn syrup
1/4 ts Cinnamon
1/4 ts Ground nutmeg
1/4 ts Ground cloves
1/4 c Toasted slivered almonds
Rub roast with a little salt and pepper. Place on rack in shallow roasting pan. Roast, uncovered at 325 degrees for 2-4 hours. Meanwhile, combine preserves, vinegar, syrup, spices and 1/4 teaspoon salt. Heat and stir until boiling, reduce heat and simmer for 2 minutes. Add almonds. Keep sauce warm. Spoon some sauce over roast to glaze. Return to oven until meat thermometer reads 170 degrees, basting with sauce several times. Remove from oven and let stand ten minutes. Slice roast and pass remaining sauce over slices. Heat and serve. -----

Making A Cherry Glaze For Pork Loins
Making a simple Cherry Glaze from scratch to put on my pork loins I was smoking. Also made an Apricot-Pineapple glaze by subsituting the Cherry Currant with the Apricot-Pineapple Perserves. The glaze turned out awesome on the pork loins.

Almond & Herb Crusted Pork Tenderloin with Cherries, Apples, & Peaches
I love this recipe as it is such a nice transition from from summer to fall with seasonal fruits that make for a warm and cozy dish. Full recipe details below!
Ingredients
2LBS pork tenderloin filet
4-6C apples, peaches, cherries, and fennel, chopped (you can use any fruits of your liking or seasonal items)
Glaze
1/4C bone broth
1-2TBS raw honey
2TBS olive oil
Combine everything in saucepan on low to medium heat, stirring occasionally until everything is well combined.
Almond & Herb Crust
2C almonds, finely chopped in food processor
2TBS thyme, chopped
1TBS sea salt
Combine all ingredients until well mixed.
To make:
• Preheat oven to 975*F
• Prepare glaze and crust, set aside.
• Transfer glaze to large mixing bowl and coat tenderloin filet in in glaze.
• Transfer tenderloin to herb and crust mixture so that all sides of tenderloin are evenly coated.
• Coat the bottom of a baking dish with a little oil.
• Add in chopped fruits to bottom of pan.
• Place pork tenderloin over fruits and roast in oven for 30 min or until internal temperature is 145*F.
• Remove from oven and allow tenderloin to rest for about 10 minutes.
