Fresh Cherry Cheesecake by Touch of Spice
The season for fresh cherries is here! This recipe is delicious with fresh cherries stewed in water or even just pitted and placed on top. You could also use cherry jam (or any fruit jam) if you can’t find fresh cherries. Will last in the fridge for a week but I’m pretty sure it won’t get the chance to. Enjoy!
Ingredients:
For the crust:
2 cups graham crackers, ground
1 tsp kosher salt
2 tbsp sugar
1 tsp cinnamon
½ stick butter, melted
For the filling:
16 oz cream cheese (2 packets) softened
4 large eggs
1 tbsp pure vanilla extract
1 tsp kosher salt
1 cup sour cream
Zest of 1 lemon
For the cherry sauce: cook 4 cups pitted cherries with 1 cup water and 2 tbsp sugar until reduced
Directions:
Combine all dry ingredients for crust before blending in melted butter until mixture resembles wet sand. Press into greased, 9” springform pan. Bake at 350F for 12 mins.
Mix cream cheese, vanilla, and salt until smooth. Add in eggs one at a time until well combined. Blend in sour cream and lemon zest.
Pour filling into crust and bake at 300F for 1 hour (or until set but edges are brown)
Top with cherry filling (or fresh pitted cherries). Refrigerate for 1 hour before serving.

Apple Cake For Two
Sometimes an entire cake is a bit much - So here is our 'Apple Cake For Two Recipe' - just enough for a taste, and not so much that you're eating it all week. Or feeling horrible because you ate a full-size cake in one sitting.
Yields 1 6 cake.
Ingredients:
60 mL (¼ cup) butter, melted
125 mL (½ cup) sugar mix white & brown
1 large egg
2 mL (½ tsp) cinnamon
1 mL (¼ tsp) cloves
1 mL (¼ tsp) allspice
2 mL (½ tsp) pure vanilla extract
125 mL (½ cup) packed grated apple (from 1 - small apple)
125 mL (½ cup) all-purpose flour
2 mL (½ tsp) baking powder
2 mL (½ tsp) salt
60 mL (¼ cup) chopped pecans, optional
Method:
Preheat the oven to 350°F (180ºC).
Grease a 6 square or round cake pan with butter.
Beat together the butter and sugar.
Add the egg, cinnamon, cloves, allspice and vanilla and beat another minute.
Grate in the apple and beat until well combined.
Combine the flour, salt and baking powder then stir into the apple mixture until just combined.
Do not overmix.
Stir in the pecans at this point.
Pour the batter into the pan, and bake for about 40 minutes.
Moist crumbs on a toothpick inserted in the middle indicate done.
Allow the cake to cool completely on a wire rack.

Honestly, this apple spice cake recipe with cream cheese frosting turned out great! Compared to the apple caramel cake I made a few years ago, this cake had a lot more apple flavor, thanks to the homemade applesauce in the batter. I also used the perfect amount and balance of spices: just enough to complement the apples without overpowering them.
I also really liked the cream cheese frosting, too. The coolness contrasted nicely with the spices, and the tanginess brought out all the other flavors. I think brown sugar caramel sauce would work well, cream cheese frosting is a good choice, too.
One thing I wanted to point out was this cake was an apple spice cake (more apple flavor), not a spice apple cake (a spice cake with apple in the background). If you'd prefer a spicier cake, use 1 teaspoon each of cinnamon, ginger, and nutmeg. I think this cake would be good either way, so it's personal preference.
Although this cake was very good, in all honesty, I would like to revisit this recipe at some point in order to get a more intense apple flavor. Like I said, the apple flavor was definitely stronger than the previous cake I made, but I think there's still room for improvement.
In the future, I would like to try making applesauce from apples baked in the oven. A bit of char brings out flavor, so I think that baking the apples instead of boiling or microwaving would be a good idea. In addition, after my amazing coconut pineapple cake, I think that apple pie filling between the two layers would take this apple spice cake to the next level.????????????????????????????????????
Apple Spice Cake Recipe with Cream Cheese Frosting Ingredients
1 15.25 oz box white cake mix
1 3.4 oz instant vanilla pudding
1 cup unsweetened applesauce (240g) - I used homemade
4 Tablespoons unsalted butter
1/4 cup sour cream
3 large eggs
1 Tablespoon lemon juice
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1 Tablespoon water (to loosen the batter)
