Hey folks we’re back... sorry for the hiatus... Zander is 3 now can you imagine ????! Out of the blue the other day he asked to make a cooking video... so here it is... I’m hoping this will become a thing as he really loves to make little videos of himself lately... we shall see... no promises. For now, enjoy!
Here’s the recipe:
Oatcakes or Cookies
* 2 Cups Oatmeal
* 1 Cup Flour
* 1/2 tsp Salt
* 1/2 Cup Vegetable Oil or Butter
* 1/4 tsp Baking Soda
* 1/2 Cup Brown Sugar
* 1/4 Cup Warm Water
* 1/2 cup of add in’s like chocolate chips or trail mix
1. Preheat oven to 400 degrees and line baking sheet with parchment paper.
3. Dissolve baking soda in warm water (add a little more water if needed).
5. Combine dry ingredients with oil/butter, then add dissolved baking soda.
6. Mold into a dough ball, then press it out onto a baking sheet. You can roll it out with a dough pin to make it thin as you want it to be about 1/4 inch thick. OR roll into small flattened balls for cookies
7. Bake for 12-15 minutes for oatcakes and 8-10 minutes for cookies until they are golden brown. They should be crisp and crunchy, not chewy.

Today I'm trying out Sohla's recipe for Trail Mix Cookies developed from the Bon Appétit Test Kitchen for Healthy-ish. This cookie is absolutely loaded with toasted nuts, seeds, dried fruits, and chocolate. I love the combination of textures and flavors in this cookie: crispy cookie edges, chewy cooke center, crunchy nuts, chewy fruit, gooey chocolate, and flaky salt to finish it off. I ended up making this recipe twice (my chocolate chips melted the first time) -- but the good news is this cookie is delicious even if you mess it up. This is truly a fool-proof cookie recipe.

INGREDIENTS
1½ cups assorted raw nuts and seeds
½ cup (60 g) old-fashioned oats
1 large egg
4 Tbsp. unsalted butter, melted
¼ cup (packed; 50 g) dark brown sugar
2 Tbsp. (25 g) granulated sugar
1½ tsp. vanilla extract
1 tsp. kosher salt
½ tsp. baking soda
¾ cup assorted dried fruit (cut into ½ pieces if large)
¾ cup chopped bittersweet chocolate bars or chips or disks
½ cup (63 g) all-purpose flour

Trail Mix Cookies | Happilo Recipes
These trail mix cookies are the ultimate snacking companion with the perfect balance of sweetness & crunch in every bite. Happilo’s Nut Mix, Happilo’s Blueberry Cranberry Duet & Happilo’s Pumpkin seeds make for the perfect trail mix for this recipe.
To make this recipe, you need:-
Ingredients
-220gms butter, softened,
-1/2 cup granulated sugar
-1/2 cup brown sugar
-1 large egg
-1 tsp vanilla extract
-1 1/3 cups all-purpose flour
-1/2 tsp baking soda
-1/2 tsp ground cinnamon
-2 cups old-fashioned rolled oats
-1 cup Happilo Nut mix
-1/4 cup Blueberry Cranberry Duet
-1/4 cup Pumpkin Seeds
Instructions:-
-Preheat to 180°. Line a cookie sheet with parchment paper then set aside.
Cream butter and both sugars together until light and fluffy.
-Add the egg and vanilla and beat until everything is completely incorporated.
-Sift the flour, baking soda and cinnamon over the wet ingredients and mix just until combined.
-Add the rolled oats and 1 cup of Happilo Nut mix, Happilo blueberry cranberry duet & Happilo pumpkin seeds and mix until completely incorporated.
-Refrigerate the batter for at least 30 minutes.
-Now scoop out the cookie dough on a baking sheet using an ice-cream scooper. Decorate the tops with some more Nut mix
-Bake for 12-15 minutes or until the edges start to brown.
Remove from the oven and transfer them to a wire rack to cool completely.
Optional - You can even a handful of chocolate chips to the batter.

2 eggs, at room temperature

2 cups rolled oats

Trail Mix Cookies are simple and easy to make. Everybody loves a good trail mix snack and these Trail Mix Cookies are simply delicious. Sunflower seeds, cashews, almonds, raisins, and M&M candies were used in this recipe however feel free to create your own/favorite trail mix blend when creating these cookies. Rolled oats and coconut flakes were added in this recipe to enhance the flavor and texture of this cookie. These cookies only took twelve minutes in the oven (oven vary). I particularly enjoy these cookies as an afternoon snack and they can be enjoyed anytime of day. 28g 2 tbsp. sunflower seeds (raw or toasted)
42g/ 3 tbsp. unsweetened coconut flakes
30g/ 1/3 cup. almonds
36g/ 1/2 cup rolled oats
46g/ 1/3 cup chopped cashews
52g/ 1/3 cup raisins
67g/ 1/3 cup plain M&M candies
188g/ 1.5 cups all-purpose flour
100g/ ½ cup granulated sugar
97g/½ cup brown sugar
2g/ ½ tsp baking powder
2g/ ½ tsp baking soda
1g/ ¼ tsp salt
4g/ 1 tsp vanilla
113g/ 8 tbsp. unsalted butter (room temp)
57g/ 1 egg
Preheat oven to 350F/176C
In a separate bowl, make the trail mix by combining sunflower seeds, cashews, almonds, M&Ms, and raisins and set aside.
In a medium bowl combine flour, coconut flakes, salt, baking soda and baking powder then set aside.
In a large bowl, combine cream butter, sugars, and vanilla until smooth and creamy
Add egg and combine.
Combine wet and dry ingredients until just combined
Add rolled oats and combine
Fold in trail mix
Chill dough for 15 mins
Transfer/scoop cookies onto a baking tray lined with parchment paper
Place cookies 2 inches apart
Press cookies down slightly
Bake @ 350F/ 176C for 12-15 minutes (ovens vary)
Allow to cool and serve
Recipe makes 12 large cookies.
