Ingredients:
4 cups diced or shredded cooked chicken
1 cup seedless grapes halved or quartered
1 red apple diced
2 stalks celery diced
1/2 cup pecans (optional)
1 cup dried cranberries
1/2 cup shredded parmesan cheese
- mix together in large bowl.
In separate bowl combine and mix well:
1 cup mayonnaise
2 tablespoons lemon juice
1/4 cup chopped fresh parsley
1/4 teaspoon garlic powder
1/4 teaspoon thyme
1/2 teaspoon sweet basil
1/4 teaspoon dried mustard
-Mix well and pour over chicken salad mix.
-Mix all together well and refrigerate 1-2 hours before eating.

Cranberry Chicken Salad with Apples Recipe
Ingredients for Cranberry Chicken Salad with Apples
Chicken – cubed or shredded. You can use leftover chicken or Instant Pot Shredded Chicken. We show you how to make the perfect chicken breast in this post. A store-bought, rotisserie chicken works great, too! Substitute the chicken with turkey if you wish.
Bacon – cooked to a crisp and crumbled or roughly chopped. If making this recipe Whole 30, you’ll want to use a no added sugar bacon such as Applegate.
Small apple – any variety of apple will work.
Celery – adds a nice crunch to the chicken salad.
Red onion – may substitute yellow onion.
Pecans – toasted pecans really make this recipe extra delicious, however, if you’d like to substitute walnuts or sunflower seeds (for nut-free) that is an option. Below you’ll find how to toast pecans.
Dried cranberries – may substitute dried cherries or raisins. For Whole 30, you’ll want to use a dried fruit that has no added sugars such as Made In Nature dried fruits.
Fresh rosemary – may substitute dried rosemary.
Mayonnaise – creamy, delicious avocado mayo!

Ingredients:
•1/2 cup almonds, chopped
•1 (15 ounce) can light coconut milk
•1/2 cup dried cranberries (I used fruit juice sweetened cranberries from Whole Foods)
•4 cups raw spinach leaves, tightly packed when measuring
•4 chicken breasts (about 7 ounces each), chopped into bite-sized pieces
•1/2 teaspoon finely grated fresh ginger (grate on a microplane for best results)
•1/2 teaspoon cinnamon
Directions:
1.Combine all ingredients in a large pan and cook until the chicken is fully cooked through. Serve by itself or over brown rice or whole grain pasta.

Apple Cranberry Chicken Salad Recipe
1 boneless skinless chicken breast, cooked, cooled, and chopped in bite size pieces
1 stalk celery, chopped
1/2 fuji apple, unpeeled and chopped
1/4 cup red onion chopped
1/4 cup dried sweetened cranberries or Craisins
1/4 to 1/3 cup ranch salad dressing
Pita Bread
salt and pepper to taste
Mix all of the above ingredients together. Put salad into pita bread. You can also add seedless green or red grapes to the recipe if desired.
