Recipe -
Serves - 5
Ingredients -
500g (1.1lbs) - Penne or Pasta of Choice
2 Tbsp (40ml) - Olive Oil
2 - Brown (Yellow) Onions, Diced
6 - Garlic Cloves, Minced
3 Tbsp (100g) - Concentrated Tomato Paste
150ml - Chicken Stock
2 Cans (800g-28.2oz) - Diced or Crushed Tomatoes
2 1/2 tsp (3g) - Dried Oregano
1 1/2 tsp (2g) - Dreid Basil
10g (0.35oz) - Basil Leaves, Stems Saved
2 Tbsp (60g) - Light Cream Cheese
150g (5.29oz) - Baby Spinach
Parmesan Cheese To Taste, Freshly Grated
Seasoning To Taste
Recipe Notes -
This is a vegetarian recipe but can easily be made with chicken and minced beef. This will increase protein intake.
Chicken -
Breast and thigh are great options. Personally id go with thigh as it reheats better. As for cooking breast meat, dice it up and sear first for 6 minutes and remove. As for thigh meat, dice and sear first for 10 minutes and remove. Add the chicken back in before adding in the pasta, after the sauce has been reduced for 12 minutes.
Minced (Ground Beef) -
Add the beef in first and sear for 5 minutes then continue the recipe as normal.

Easy Chicken Alfredo Penne
Servings: 6
INGREDIENTS
1½ pounds (700 grams) chicken breast, cubed
2 tablespoons butter
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon pepper
16 ounces (450 grams) penne pasta, cooked
¼ cup parsley
¼ cup parmesan, shredded
Sauce
2 tablespoons butter
4 cloves garlic, minced
3 tablespoons flour
2 cups milk
½ teaspoon oregano
½ teaspoon basil
1/2 cup parmesan, shredded
½ teaspoon salt
½ teaspoon pepper
PREPARATION
1. In a pan over medium-high heat, melt butter, then add the chicken breast.
2. Season with salt, pepper, oregano, and basil. Cook 8-10 minutes or until chicken is fully cooked. Remove from heat and set chicken aside.
3. In the same pan over medium heat, melt butter and add the garlic. Cook until the garlic begins to soften.
4. Add half of the flour to the garlic and butter, stirring until incorporated. Then add the rest of the flour and stir.
5. Pour in the milk a little bit at a time, stirring well in between, until fully incorporated and sauce begins to thicken.
6. Season with salt, pepper, oregano, and basil, and stir well to incorporate.
7. Add parmesan cheese and stir until melted.
8. Pour the sauce over cooked penne pasta, add the chicken and mix well.
9. Add parsley and extra parmesan, and mix again.
10. Enjoy!

Using grated parmesan cheese in lieu of breadcrumbs for my Parmesan Chicken with Mustard Cream Sauce, these chicken cutlets are quickly breaded and sautéed to a golden, crunchy brown. A quick mustard cream pan sauce is made to pour on top. Literally on the table in less than 30 minutes.

You Must Try This Tuscan Chicken in Delicious Creamy Sauce
I’m yet to find a chicken lover who didn’t go crazy for this recipe. It’s relatively simple to make using regular ingredients, and it’s also a complete meal. Made with spinach, sundried tomatoes, cannellini beans in a delicious creamy sauce, in 30 minutes, wow!
It’s not authentic to Tuscany, this is my version, but it does contain many of the delightful Tuscan ingredients we all love.
This recipe uses chicken breasts, you can however use chicken thighs if that’s your preference. If using breasts, you want them to be juicy and not dry. To achieve this, don’t over cook them in the pan, simply brown each side on high heat. When you touch them, they should still feel soft inside. Transfer to the oven and finish cooking at a low temperature. As soon as they become just firm to the touch, they are ready. If your sauce isn’t quite ready, take them out anyway. You will reheat them in the sauce. Some pieces will be thicker than others, so take that into consideration.
