How To make Chicken Withe Peppers
3 tbsp olive oil
3 lg red and/or yellow peppers
cut in strips
2 c very thinly sliced onions
1 tsp minced garlic :
to taste
3/4 tsp each salt and pepper
4 tsp red wine vinegar
1/2 tsp sugar
8 skinned, boned chicken thighs -- visible fat removed
1 tbsp butter or margarine
Heat 2 tablespoons of the oil in a large, heavy nonstick skillet over medium heat. Add peppers and onions and saute until soft and onions are slightly browned, about 20 minutes. Removed from heat, stir in the garlic, 1/4 tsp EACH of the salt and pepper, the vinegar and sugar. Scrape into a bowl. Wipe pan clean with a paper towel.
Season chicken with remaining salt and pepper. Heat remaining 1 tablespoon oil and the butter in the skillet until bubbly. Add thighs ad cook, turning occasionally, until opaque in center and brown on both sides, about 20 minutes. Remove from pan and pour off fat.
Return chicken and bell pepper mixture to skillet and cook stir until hot, about 3 minutes.

This Italian chicken and peppers (pollo coi peperoni) recipe is super flavorful and really easy to make. Traditionally the dish is made with a whole chicken cut into pieces, but substituting boneless skinless chicken thighs works really well! The chicken and peppers braise in a touch of wine and plum tomatoes, creating the ultimate tender chicken thigh dish. Make sure to serve with a loaf of bread to soak up the all delicious sauce. INGREDIENTS
- 4 pounds boneless skinless chicken thighs
- 3-4 large bell peppers - used red and green - sliced
- 8 ounces (about 1/3 of a standard can of plum tomatoes) hand crushed plum tomatoes
- 3-4 cloves of garlic - sliced
- Salt and pepper - to taste
- 1/3 cup dry White wine
- 1/4 cup olive oil - for frying
- 1/4 cup Fresh basil - optional
INSTRUCTIONS
1. Season chicken with salt and pepper and sear until brown on both sides (about 3-4 minutes per side) in a large ovenproof pan over medium heat in a few tablespoons of olive oil.
2. Set cooked chicken aside and season a bit more with more kosher salt. Add the garlic to the pan. Cook for a minute until fragrant then add in all the peppers and stir to coat. If needed add a bit more olive oil to the pan.
3. Next add the white wine to the pan and cook for 3 minutes over medium-high heat until completely evaporated.
4. Next, add the tomatoes to the pan and stir together. Bring to a simmer then add in all the chicken. Mix well to coat the chicken with the tomatoes.
5. Lightly cover the pan (leave it cracked open) and place in a 325f oven to cook. After 30 minutes check on the chicken and if there is too much liquid remove the cover and continue to cook for another 30 minutes until the chicken absorbs most of the tomatoes and the peppers are very soft.
6. To crisp up the chicken a bit broil for the last 5 minutes.
7. Remove the chicken from the oven and if there is still too much liquid cook over medium-high heat to reduce a bit more. Taste test the chicken and sauce and make any final adjustments to seasoning if required. Finish with fresh basil and serve with crusty Italian bread to mop up all the sauce and peppers. Enjoy!

Ingredients for Lemon Pepper Chicken:
- Chicken, large pieces with bones- 500 gms
For Marination:
- Salt- 1 tsp
- Crushed Pepper- 1 tsp (coarse granules)
- Lemon Juice- 2 tsp
- Thick whisked curd/yogurt- 2 tbsp
- Ginger Garlic Paste- 1.5 tsp
Whole Spices:
- Green Cardamom- 3
- Cloves-3
- Cinnamon- 2
- Black Peppercorns- 10
Other Ingredients:
- Whisked curd/plain yogurt- 4 tbsp
- Crushed Pepper- 1/4 tsp
- Green Chillies, slit- 4
- Garam Masala Powder- 1/4 tsp
- Oil- 3 tbsp
- Butter- a dollop (1 tbsp)
- Coriander leaves, finely chopped- 1 tbsp
Preparation:
- Crush the black peppercorns.
- Marinate the chicken pieces with items indicated. Mix & set aside for 1 hr.
- Whisk the curd/yogurt.
- Slit the green chillies and fine chop the coriander leaves.
Process:
- Heat oil & butter in a flat pan and add the whole spices.
- Once it splutters, add the marinated chicken & fry on high heat for 1 min and then flip the chicken pieces.
- Continue to fry for 2-3 more mins on high turning the pieces a few times.
- Add the balance marinade and continue to fry on both sides for another 5 mins on medium heat till evenly browned.
- Now reduce the heat to low, add the whisked curd/plain yogurt, 1/4 tsp crushed Pepper, slit green chillies and mix everything well.
- Cover & cook on low heat for 15 mins, flipping and stirring after 10 mins. Cook till the liquid has nearly dried and the chicken is tender.
- Now add the garam masala powder, mix well and fry for another 5 mins till the chicken pieces are browned.
- Garnish with finely chopped coriander leaves and serve hot.

Ingredients for Chicken Kali Mirch:
- Chicken, large pieces with bones - 500 gms
For the Marination:
- Salt- 1 tsp
- Crushed Black Pepper- 1 tsp
- Lemon Juice- 2 tsp
Onion-Cashew Paste: (To be fried and then made into a paste)
- Onion, sliced- 2 small (100 gms)
- Ginger, chopped- 1” piece (8-9 gms)
- Garlic cloves- 6-7(8-9 gms)
- Green Chillies- 2-3 (8-9 gms)
- Cashew nuts- 8
Whole Spices:
- Green Cardamom- 3
- Cloves- 3
- Cinnamon- 2 pieces
Other Ingredients:
- Whisked Yogurt- 3 tbsp whisked and then 3 tbsp water added
- Garam Masala Powder- 1/2 tsp
- Crushed Pepper- 1 tsp
- Kasuri Methi (Fenugreek Leaves)- 2 tsp
- Salt for seasoning- 1/2 tsp
Preparation:
- Slice the onions, peel the ginger and garlic & chop the ginger. Cut the green chillies to pieces.
- Heat 1.5 tbsp oil in a pan and add the sliced onions. Fry on medium heat for 4 mins till the onions are soft and translucent.
- Add the chopped ginger and garlic and keep frying on medium heat for 1 min.
- Now add the cashew nuts and cut green chillies. Mix and fry on low heat for another minute.
- Remove onto a plate and allow to cool.
- To blend, add the items to a blender/grinder and coarse grind it. Now add 3 tbsp water and blend it into a smooth paste.
- Whisk the curd/plain yogurt till smooth and then add 3 tbsp water. Give a mix and set aside.
- Dry roast the Kasuri Methi, set aside and crush it with your hand.
Process:
- Heat 2 tbsp oil in a pan and place the marinated chicken pieces side by side. Fry on high heat for 2 mins and then turn and continue to fry for 2 mins on the other side.
- Continue to fry on medium heat for another 2-3 mins turning the chicken pieces till the pieces are uniformly browned.
- Now take another pan and heat 2 tbsp oil.
- Add the whole spices and allow it to splutter.
- Give a stir and keeping the heat on low, add the paste blended earlier.
- Stir and fry on low heat for 6-7 mins till oil separates.
- Add the fried chicken pieces, mix and fry on medium to low heat for 2-3 mins.
- Reduce the heat to low and add the whisked curd/yogurt (mixed with water), the garam masala powder and salt to season.
- Stir and cook on low heat for 2-3 mins till oil separates.
- Now add 150 ml water, mix and cover & cook on low heat for 10 mins till chicken pieces are tender.
- Open the lid and sprinkle the crushed pepper and Kasuri Methi. Mix and simmer on low heat for 2-3 mins till oil separates.

Black Pepper Chicken Recipe
1 lb chicken breasts or thighs , sliced
Marinade
1 tablespoon light soy sauce
1 tablespoon Shaoxing wine or sherry
1 tablespoon cornstarch
Sauce
1/2 cup chicken broth
2 tablespoons light soy sauce
2 tablespoons Shaoxing wine or sherry
2 teaspoons soy sauce
1 tablespoon cornstarch
1 1/2 tablespoons sugar
2 teaspoons coarsely ground black pepper
1/8 teaspoon salt
Stir fry
2 tablespoons oil
1 tablespoon minced ginger
2 cloves garlic minced
1/2 white onion chopped
2 bell peppers chopped red/green
INSTRUCTIONS
Combine soy sauce, Shaoxing wine, and cornstarch.
Add the marinade to the chicken and combine. Gently mix by hand until the chicken is coated with the mixture. Marinate for 10 to 15 minutes.
Combine all the sauce ingredients in a small bowl. Mix well and set aside.
Heat 1 tablespoon of oil in a large skillet over medium-high heat until hot. Add the chicken. Cook the chicken on all sides until browned. Stir occasionally, Transfer the chicken to a plate or bowl and set aside.
Add the remaining 1 tablespoon of oil to the skillet. Add the ginger and garlic. Give it a quick stir until fragrant. Add the white onion and peppers. Stir and cook for 20 seconds.
Stir the sauce mixture until the cornstarch is dissolved completely, and pour it into the skillet. Stir with a spatula immediately and cook until the sauce thickens enough to coat the back of a spoon, for a few seconds. Re-add the cooked chicken. Quickly stir a few times to coat everything with the sauce. Turn off heat and remove the skillet from the stove. Immediately transfer everything to a big plate so the ingredients won’t keep cooking in the hot skillet.
