How To make Chicken with Shiitake Mushroom Sauce
1 c Nonfat cottage cheese
1/2 c Evaporated skim milk
1/4 c Nonfat cream cheese
1/2 c Finely chopped onions
1/2 c Sliced sun-dried tomatoes
1/2 c Dry white wine
1 ts Finely chopped garlic
2 c Sliced button mushrooms
1 c Sliced Shiitake mushrooms
1 1/2 c No-salt-added chicken broth
2 tb Low-sodium soy sauce
1 ts Lemon juice
1/4 ts Dried thyme
4 ea Boneless, skinless chicken
-breast halves (4 to 5 oz. -each) 1 ts Cornstarch dissolved in
1 tb Water
1 tb Finely chopped fresh basil
Whirl cottage cheese, evaporated milk and cream cheese in a blender until smooth. Set aside 1/2 cup. Refrigerate remainder for another use (such as to make creamy soups). Combine onions, tomatoes, wine and garlic in a large non-stick skillet. Cover; cook over medium heat 2 minutes. Stir in mushrooms, broth, soy sauce, lemon juice and thyme. Add chicken. Cover and simmer 5 minutes. Turn chicken; cook 5 minutes longer. Transfer chicken to a plate. Cover. Stir cornstarch mixture into the skillet. Add the cheese mixture. Boil 1 minute. Pour sauce over chicken breasts and sprinkle with basil. Serve at once. Makes 4 servings. Approximate nutritional analysis (per serving): 215 calories; 34g protein; 10g carbohydrate; 2g fat (9% of calories); 2g fiber; 71mg cholesterol; 393mg sodium; 39% of the Daily Value for vitamin B6; 27% for riboflavin. Braised Chicken and Shiitake Mushrooms
During winter months, my mom used to always have some sort of stew or braise going on a slow burble on the stove.
I’m slowly becoming my mother.
Either that or I’m experiencing some sort of seasonal metamorphosis (aka laziness). ‘Winter’ has finally hit southern California and all I want for dinner are stews, braises, anything I can throw into a pot, no fuss.
Here’s a simple recipe for braised chicken and shiitake mushrooms. Full of umami flavor from the shiitake mushrooms, clean, easy and goes great with a bowl of steaming white rice. Fill your tummy with satisfying warmth. Enjoy!
Ingredients:
8 large shiitake mushrooms, trimmed
1” knob of ginger, sliced
3 scallions, trimmed and halved
2 lbs of chicken
1 cup of chicken stock
2 tbsp of shaoxing wine
1 star anise pod
5 dried chili peppers
2 tbsp of dark soy sauce
2 tbsp of regular soy sauce
Directions:
1. In a large pot, add chicken, chicken stock, shaoxing wine and ginger. Bring to a boil over medium high heat.
2. Toss in the star anise pod and dried chili peppers. Lower to a simmer and cover. Simmer for 30 minutes.
3. Pour in dark soy sauce and regular soy sauce. Add scallions and shiitake mushrooms. Cover and simmer for another 15 minutes.
4. Serve with rice and enjoy!
Notes:
If you can’t find fresh shiitake mushrooms, you can use dried shiitakes.
If you can’t find shaoxing wine, you can use rice wine.
This is pretty mild and clean in flavor, if you find it not salty enough, feel fry to add a bit more soy sauce.

Today I'm making my easy creamy garlic mushroom sauce. This cream of mushroom sauce recipe is one of my top mushroom recipes as it's very versatile and pairs beautifully with so many dishes. In this video I made creamy mushroom pasta but you can add it to almost anything you like. This sauce can also be made in a large batch and stored to use in different ways during the week!

*INGREDIENTS*
1/2 lb / 200g mushrooms
6-7 (1 tbsp) garlic
1 medium white/yellow onion (1 small purple onion)
1 tbsp butter
1 cup chicken stock/vegetable
1/3 cup heavy cream
1/3 cup parmesan cheese
1 tbsp dried oregano
bunch of parsley
salt and pepper
• No stock?
You can use stock cubes dissolved in 1 cup of water. Or use plain water but the flavor will be slightly mellowed
• No oregano/parsley?
You can use Italian herb mix, basil or rosemary also pair well with mushrooms
• No heavy cream?
Substitute with evaporated milk/half and half/fresh cream. The duration of cooking and texture will need to be altered
• No parmesan cheese?
Any cheese that will melt smoothly without causing stringiness can be used. Alter the quantity as needed
Tips:
• Mushrooms need to be cooked until it's browned to release maximum flavor
• Be weary of salt if used store-bought stock. To be safe use low sodium stock or alter the measurements depending on your stock
• In case it ends up too salty, add sugar to balance the saltiness
