How To make Chinese Almond Cookies
2 3/4 c Sifted flour
1/2 ts Soda
1 c Butter
1 ts Almond extract
1 c Sugar
1/2 ts Salt
1 Slightly beaten egg
1/3 c Whole almonds
Sift flour, sugar, soda and salt together into bowl. Cut in butter till mixt resembles cornmeal. Add egg and almond extract; mix well. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheet. Place an almond atop each cookie and press down to flatten slightly. Bake at 325 degrees for 15 to 18 mins. Cool on rack.

My parents used to own a Chinese restaurant, and one of the very few pastries we sold was almond cookies. When no one was looking, I would steal one and eat it. ???? This flaky, crunchy, yet soft shortbread like cookie is one of my favorite memories of my childhood. This cookie is traditionally made with lard and only all-purpose flour. I modified my dad's recipe by replacing it with butter and adding almond flour. I hope you like my version of this traditional Chinese cookie.

Almond Flour 1/4cup/28g
Corn flower 1/4cup / 35g
Baking powder 1/2tsp/2g
Baking soda 1/2tsp / 2.5g
Egg yolk 40g
32cmX45cm Baking pan,
24 (16g) Biscuits
Bake for 5 minutes at 180C/356F with convection oven
Reduce to 165C/330 Bake for another 8-10 minutes.
Bake for 15-18 minutes at 180C/156F with conventional oven.

Chinese Almond Cookies Recipe:
In a bowl mix
1 cup All Purpose Flour
1/2 cup Almond Flour
1/2 tsp Baking Soda
1/4 tsp Kosher Salt
In another bowl mix
1/2 cup room temp butter
cream with 1/2 cup sugar
Add 1 egg and mix again
add 1 tsp vanilla
1/2 tsp almond extract
Mix the dry ingredients into the wet. Chill 30 minutes.
Roll into balls, place onto a parchment-lined baking sheet
flatten with a spoon, brush with egg wash and place a raw almond in the center of each cookie. If you'd like small, dense cookies, chill the cookies for 15 minutes before baking.
Bake at 350ºF for 8-10 minutes until golden brown
