Cottage Cheesecake| Russian Style| With Apple and Raisins
A delicious Cottage cheesecake that's so easy to make. In Ukraine and Russia its called Syrnik or Tvorozhnik. I called it Zapekanka (Sweet Casserole). Traditionally cooked with cottage cheese, eggs, flour, butter and raisins. This is my favorite interpretation of a famous recipe, the way I always cook it. You can eat cottage cheesecake with apple and raisins for a breakfast or as a dessert. Semi sweet, low-fat with notes of baked apple, orange zest and vanilla... no one can pass by.
If you want to get low-fat recipe, just do not add butter on top. Also its a perfect recipe for kids, healthy and yummy, they will love it.

Ingredients
800 g cottage cheese (1.8 lb)
3 eggs
1 cup raisins
1/2 cup sour cream
1/3 cup sugar (or to taste)
1/4 cup corn starch
1/4 tsp salt
1 teaspoon vanilla extract
50 g butter (optional)
1 apple
zest of 1 orange
Preparation
1. Preheat oven to 350 degrees F (180 degrees C).
2. Place cottage cheese, eggs, sour cream, sugar, corn starch, salt, vanilla extract into a bowl and blend until smooth.
3. Add raisins, cutted apple,orange zest and mix well.
4. Pour into a greased with butter dish.
5. Put chopped butter on top (optional).
6. Bake in the preheated oven for 60 minutes, or until golden brown.
Allow to cool completely.

P.S. For low-fat recipe just do not put butter on top.

Recipe!
Macadamia Shortbread
Ingredients:
210g Butter Unsalted
75g Coconut Sugar
210g Flour
1g Lemon Zest
3g Vanilla
2g Salt
50g Macadamia (Chopped)
Method:
1. Beat butter until soft, scrape down the bowl
2. Add sugar and beat but do not aerate
3. Add dry ingredients and beat until combined
4. Spread the shortbread into the tray using a small palette knife
5. Bake the shortbread in the oven at 160 degrees celsius for 10 minutes
Blueberry Coconut Cake
Ingredients:
200g Flour
4g Baking Powder
3g Baking Soda
1g Salt
120g Olive Oil
180g Coconut Sugar
2each Eggs
180 Sour Cream
50g Shredded Coconut
1each Lemon Zest
180g Blueberries (frozen or fresh)
Method:
1. Mix together eggs, oil, yoghurt and vanilla
2. Add coconut sugar and mix
3. Add dry ingredients and mix
4. Fold through blueberries
5. Pour cake batter over the top of the shortbread and bake for 30 minutes
Lemon Curd
Ingredients:
225g Lemon Juice
225g White Sugar
6each Eggs
200g Butter
3g Gelatine
15g Water
Method:
1. Soak gelatine in the water
2. Add lemon juice, eggs and sugar to the pot and whisk
3. Bring to a boil
4. Take the pot off the heat and stir in the gelatine until dissolved
5. Cool the curd for 10 minutes
6. Pour into a jug and add butter and blitz until smooth
7. Pour over the cake and cool in the fridge until set
Blueberry Jelly
Ingredients:
200g Water
100g Blueberries
25g White Sugar
2.5 Agar Agar
Method:
1. Add blueberry and water to a pot on a medium heat
2. Bring to a boil and blend with a stick blender
3. Add the agar agar and sugar and bring to a boil
4. Take off the heat and pour straight over the cake and instantly chill until set

Soft unsalted butter - 84 grams
Golden syrup - 1/4 cup(60ml) plus 1-2 tablespoons, read note
Zest of one really fresh orange
Pinch of salt
Quick Cooking Oats - 150 grams(I have used Quaker)
Dark chocolate - 50 grams, chopped.
Optional add-ins, cinnamon, cardamom, walnuts, dates, figs.
