How To make Choco Lowfat Muffins
Ingredients

cup
flour, all-purpose
3/4
cup
sugar
1/4
cup
cocoa powder, unsweetened, regular or european style
2
teaspoon
baking powder
1
teaspoon
baking soda
1/2
teaspoon
salt
2/3
cup
vanilla yogurt, nonfat
2/3
cup
milk, skim
1/2
teaspoon
vanilla extract
1
powdered sugar (optional)
Directions:
Preheat oven to 400 degrees; line muffin cups with paper baking cups. In a medium bowl, stir together the flour, sugar, cocoa, baking powder, baking soda and salt. Stir in the yogurt, milk and vanilla extract just until combined. Do not beat. Fill the muffin cups 2/3 full with batter.
Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Cool slightly in the pans on wire racks. Remove from the pans. Sprinkle powdered sugar over the tops of the muffins, if desired. Serve warm. Cover and store at room temperature, or freeze in an airtight container for longer storage.

5-Ingredient Chocolate Protein Muffins | Minimalist Baker Recipes
FUDGY 5-Ingredient Chocolate Protein Muffins! Just 5 wholesome ingredients required, naturally sweetened, 1 bowl, and protein-rich (12 grams protein per muffin)!
4 eggs
2 tsp vanilla extract
1/4 cup oil (avocado or melted coconut)
2/3 cup warm water
2 1/2 cups gluten-free chocolate cake mix (we used ours!)
3/4 cup chocolate protein powder (we used Sprouted Epic chocolate maca)
*optional*: 1/3 cup semisweet chocolate chips + more for topping
Bake in lined muffin tin @350F for 22-26 minutes or until toothpick comes out clean. Covered leftovers will keep for 3-4 days (freeze after 3 days). Enjoy!

INGREDIENTS AND INSTRUCTIONS FOR THE VEGAN, OIL-FREE, AND LOW-FAT CHOCOLATE MUFFINS:
Dry Ingredients -
1 1/2 - 2 C Flour (I use whole wheat flour)
1/2 C Brown Sugar
1/4 C Insweet cocoa powder
PInch of salt
1 tsp baking soda and baking powder
1 tsp cinnamon (optional)
Wet Ingredients -
1-2 C apple sauce (I start with 1 and add more as needed. You can also use 2 ripe bananas if you prefer that over apple sauce)
1 capful of vanilla
1/3 C plant milk ( I start with that amount and add more if needed)
Combine dry and wet ingredients and mix well. Place in non-stick muffin pan. Bake at 350 for 10-15 minutes. I did 13 minutes.
