How To make Choco Lowfat Muffins
Ingredients

flour, all-purpose
3/4
cup
sugar
1/4
cup
cocoa powder, unsweetened, regular or european style
2
teaspoon
baking powder
1
teaspoon
baking soda
1/2
teaspoon
salt
2/3
cup
vanilla yogurt, nonfat
2/3
cup
milk, skim
1/2
teaspoon
vanilla extract
1
powdered sugar (optional)
Directions:
Preheat oven to 400 degrees; line muffin cups with paper baking cups. In a medium bowl, stir together the flour, sugar, cocoa, baking powder, baking soda and salt. Stir in the yogurt, milk and vanilla extract just until combined. Do not beat. Fill the muffin cups 2/3 full with batter.
Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Cool slightly in the pans on wire racks. Remove from the pans. Sprinkle powdered sugar over the tops of the muffins, if desired. Serve warm. Cover and store at room temperature, or freeze in an airtight container for longer storage.

Ingredients
2 mashed bananas
2 eggs
1/4 cup peanut butter (60 ml)
1/3 cup gluten-free oat/almond flour (80 ml)
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup blueberries fresh/frozen (240 ml) (I used wild blueberries)

1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries
4. Spoon to muffin pan lined with muffin liners
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 15-20 minutes
6. When the muffins have cooled a little bit, transfer them to a wire rack and let cool and enjoy! (Store in an air-tight container)

Learn how to make Heathier Chocolate Chip Muffins!???? In this video we’re making an Easy Gluten-free & Lactose-free Muffin Recipe! The recipe is super simple and uses basic ingredients! These muffins are super fluffy and delicious, so no one could ever believe that they are a healthier alternative!???? If you aren’t coeliac or intolerant to gluten, you can of course use regular flour in these muffins! Same with the lactose-free products, use only if needed!
This recipe makes about 12 muffins
Healthier chocolate chip muffins:
- 1/4 cup coconut sugar/brown sugar (60 ml)
- 1/4 cup maple syrup (60 ml)
- 3 tablespoons melted coconut oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/4 cups lactose-free unsweetened natural yoghurt (300 ml)
- 1 cup all purpose gluten-free flour mix (240 ml)
- 3/4 cup almond flour (180 ml)
- 1 teaspoon baking soda
- 1/2 - 3/4 cup dark chocolate chips, to taste (120 - 180 ml)
1. Mix coconut sugar, maple syrup, coconut oil, eggs, vanilla extract and yoghurt together
2. Add the flours and baking soda and stir until combined
3. Fold in the chocolate chips (save some for topping if you like)
4. Spoon to lined muffin tins
5. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 15-20 minutes, or until a toothpick inserted to the center comes out clean
6. When the muffins have cooled a little bit, transfer them to a wire rack and let cool
7. Store in an air-tight container
8. Enjoy!
