Using electric mixer, beat egg whites and salt in a large bowl until soft peaks form. Gradually add 1/2 c sugar and beat until stiff glossy peaks form. In another large bowl, beat egg yolks, remaining 1/2 c sugar, vegetable oil, orange juice concentrate, orange peel and lemon juice until blended. Sift cake meal and potato starch over yolk mixture and beat at low speed just until blended. Gently fold whites into mixture in two additions. GLAZE: Melt margarine in a heavy large saucepan over low heat. Add chocolate and stir until melted and smooth, Mix in orange juice concentrate and honey. Place top half of cake, top side down on foil-wrapped cardboard round. Spread 1 1/2 cup chocolate glaze in thin layer over entire cake, anchoring crumbs. Refrigerate cake 30 minutes. Rewarm remaining chocolate glaze over low heat until just pourable. Place rack on baking sheet; place cake on rack. Pour graze over cake coating entirely and smoothing sides with metal spatula. Chill cake on rack until glaze is firm. Transfer to platter. (Remove glaze on sheet for another use.) (Can be made 3 days ahead. Cover and chill. Let stand at room temperature 1 hour before serving>) GARNISH: Cake with flowers and orange peel strips if desired. -----

How to make Honey and Orange Cake!
FULL RECIPE:
Time: 2.5 hours (don’t worry, most of it is baking or simmering the orange, so you can put your feet up and take in the wonderful aromas!)
Difficulty: 6/10 – this one’s easy beezy ????
Serves: 12 hungry bees ready for afternoon tea!
Ingredients:
– 2 medium oranges (approximately 200g each)
– 6 eggs
– 175g honey
– 200g ground almonds
– 120g plain flour (or a gluten free flour blend, such as chickpea flour, would also work)
– 1 tsp baking powder
– 1 tsp vanilla essence
– 1/2 pinch of salt
Equipment:
– One 20 cm (8 inch) wide cake tin
– Baking parchment
Method:
– Place the whole oranges into a saucepan, cover them with water and bring to boil.
– Once boiling, reduce to a simmer and cook for 1-2 hours until completely soft.
– Drain the oranges and slice them in half to remove any large obvious pips, then place the whole orange (skin and all) into a food processor and blitz until smooth.
– Now preheat the oven to 180°C (gas mark 4) and lightly grease a 20cm round tin (8 inches) and line the base with baking parchment.
-To the food processor, add the wet ingredients (eggs, honey, vanilla) and blitz until smooth. Yes, you can lick the spoon, bees!
- Put the wet mixture to the side and get out a large mixing bowl
- Add in your dry ingredients (ground almonds, flour, baking powder and salt) and mix
- Add your wet ingredients to your dry and whisk until smooth (if you have a large enough food processor you could just add all ingredients here and mix until smooth)
– Pour the mixture into your prepared cake tin, (*using a spatula to make sure you don’t miss any!)!
– Bake in the oven for 60-70 mins, until a knife comes out clean. Chef Bee suggests covering your cake with tin foil after 30 minutes to prevent the top from burning.
– Remove from the oven and leave to cool.
– Once cool, gently remove the cake from the tin and decorate with an extra drizzle of honey and a handful of freshly grated orange peel
– Enjoy with a dollop of yoghurt (drizzled with another dash of honey of course)!
