When it comes to chocolate desserts it doesn’t get much better than a rich and decadent Flourless Chocolate Cake! The texture is almost brownie like and it’s so rich and chocolatey it’s hard to stop at one slice. Better yet, this is a 1 bowl cake so there’s minimal washing up involved and it’s made with just 7 simple pantry ingredients! It’s the perfect cake for any occasion whether you serve it for birthdays, Valentine’s Day, or just because you want a sweet treat.

Torta Caprese - Flourless Chocolate Almond Cake
Torta Caprese is a traditional cake of the beautiful island of Capri from Italy. It is a dense, moist flourless chocolate cake enriched with ground almonds that bring a great flavor and texture. Also as no flour is used makes this dessert a perfect choice for those in search of gluten-free dessers.

Ingredients
Makes about 8 servings
7 oz (200g) peeled almonds
7 oz (200g) semisweet chocolate
2/3 cup (150g) butter
3/4 cup (150g) sugar, divided
4 eggs
1/4 tsp (1g) salt
1. Grease and line with parchment paper a 8 or 9 inch (20-23 cm) springform pan (with a removable base). Preheat oven to 180°C (350°F).
2. Place the peeled almonds into a food processor and process until finely ground but with still some remaining chunky pieces for a crunch texture
3. Melt chocolate and butter over a bain-marie until smooth. Let it cool slightly.
4. Meanwhile separate egg yolks from whites.
5. Mix yolks with ½ cup (100g) sugar and salt until thick and pale yellow colored.
6. Mix in cooled chocolate and add ground almonds.
7. Whip egg whites until foamy using a mixer. Gradually add ¼ cup (50g) sugar and whip until stiff peaks form. Gently fold the whipped whites into chocolate mixture.
8. Pour batter into prepared pan and bake for 30-40 minutes until a toothpick inserted into the center comes out with few crumbs attached
9. Let it cool completely in the pan over a cooling rack.
10. When cooled invert onto a serving platter and dust with powdered sugar.
11. Serve if desired with whipped cream and fresh berries.

Flourless Chocolate Almond Cake | Gluten free recipes
Gluten free was never this delicious!
The chocolate flavour in this cake is so intense thanks to both the dark chocolate and the cocoa powder!
We take it up a notch by adding ground almonds which gives it not only a subtle nutty taste but it also gives it structure which makes for a truly decadent dessert
Brandy is a nice touch but totally optional
Overall, this cake is great on its own, its rich, dense and super duper chocolatey
Oh and another great thing about flourless cakes is the fact that those cracks you see at the top are expected! phew, you cant go wrong! ;)
I like to enjoy this with a dollop of freshly whipped cream :)
Ingredients for one 9-inch round pan
• 200 g dark or bittersweet chocolate
• 200g (3/4 cup + 1 tbsp) unsalted butter
• 200g (1 cup) granulated sugar, separated
• 4 large eggs, separated
• 1 tbsp brandy, optional
• 1 tsp vanilla
• 100g (1 cup) ground almonds
• ¼ teaspoon salt
• 1 Tbsp cocoa powder, plus more for dusting
30 mins in a 350°F/180°C oven

3 ounces semisweet chocolate,
plus1 ounce unsweetened chocolate
2 tablespoons dark rum or 2 tablespoons strong coffee
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
3 egg yolks
3 egg whites
1/4 teaspoon cream of tartar
1 pinch salt
2 tablespoons granulated sugar
1/3 cup blanched almond (pulverized in blender or food processor with 2 tablespoons granulated sugar)
1/4 teaspoon almond extract
1/2 cup cake flour

I’m in the kitchen this week with my Dad baking up my favorite chocolate almond torte recipe. My dad makes this decadent and rich chocolate torte for me each year for my birthday. It’s something I look forward to every year and it never disappoints. Chocolate Almond Torte
Ingredients:
For the cake:
4 1-ounce squares of unsweetened chocolate melted with 2 tablespoons coffee
½ cup butter
⅔ cup sugar plus 1 tbsp (divided)
3 egg yolks
3 egg whites
½ tsp salt
⅓ cup pulverized almonds
1 tsp almond extract
¾ cup flour
For the glaze:
1 1-ounce square of semisweet chocolate
1 tbsp coffee
3 tbsp butter
Directions:
Preheat oven to 350° F. If starting with whole almonds, grind to a fine texture in a food processor. Cream butter and ⅔ cup sugar until they form a pale yellow, fluffy mixture. Separate eggs. Beat egg yolks into butter and sugar mixture until well blended. In a separate bowl whisk egg whites until soft peaks form. Add 1 tablespoon sugar. Melt chocolate in microwave and combine with coffee. Use a spatula to blend melted chocolate into butter, sugar, and egg yolk mixture. Stir in almonds and almond extract. Immediately stir in ¼ of egg whites. Alternate folding in remaining egg whites and flour. Coat an 8-inch round pan with baking spray. Press batter into pan. Bake at 350° F for 20-25 minutes. Cake should not be over baked. A toothpick should come clean from the circumference, but the center should move slightly if shaken. Remove from oven and allow to cool for 10 minutes.
While cake is cooling make the glaze by melting semisweet chocolate, coffee, and butter over medium heat until smooth and silky. Remove cake from pan. Pour glaze over cake and spread with a flat spatula. Serve with a dollop of whipping cream and fresh berries.
