Midwesterners Are Obsessed With This Chili Chain
Skyline Chili is to Cincinnati, Ohio what In-N-Out is to California. Midwesterners love how the chili chain puts mountains of chili and cheese on everything. Their signature dish is called a 5-Way for its spaghetti base, topped with beans, chili, onions, and loads of cheese.

Skyline Chili Recipe / Original Cincinnati Recipe
Skyline Chilli Ingredients:
- 2 lbs hamburger
- 2 cups chopped onion
- 4 cups beef broth
- 16 ounces of tomato sauce
- 3 Tbs chili powder
- 2 Tbs apple cider vinegar
- 2 Tps Worcestershire Sauce
- 3 Tbs cocoa powder
- 2 tsp minced garlic
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp cayenne pepper
- ¼ tsp ground all spice
- ¼ ground cloves
- 1 bay leaf
Optional Toppings:
- Shredded Cheddar Cheese
- Chopped Onion
- Kidney Beans
• In a large skillet over medium heat, add ground beef and onions. Saute until onions are translucent and beef is no longer pink. Drain.
• Reduce the heat to low and pour the beef stock. Simmer for 10 minutes.
• Mix in the tomato sauce, chili powder, apple cider vinegar, Worcestershire sauce, unsweetened chocolate or cocoa powder, minced garlic, cinnamon, cumin, salt, red or cayenne pepper, allspice, cloves, and bay leaf or bay leaf powder. Simmer, uncovered, for 1 hour.
• Remove the bay leaf (if using) and spoon off the layer of grease on the surface.
• Serve over spaghetti noodles or on top of hot dogs. Top with cheese and other optional toppings. Enjoy!

CINCINNATI CHILI RECIPE
Ingredients:
1 stalk celery, roughly chopped
1 red long pepper, roughly chopped
¼ green pepper, roughly chopped
1 white onion
3 cloves of garlic, smashed
¼ cup olive oil, divided
1 ½ tsp cayenne
1 ½ tsp smoked paprika
1 tbsp Mexican chili powder
1 tsp oregano
1 ½ tsp ground coriander
1 tbsp cumin
1 tsp cinnamon
2 tbsp tomato paste
50g dark chocolate, finely chopped
1 796 mL can crushed tomato
1L beef stock
2 lb ground beef
Salt
500g cooked spaghetti noodles
2 cups grated cheddar cheese
Directions:
1. Place celery, peppers, half the onion, garlic and half the olive oil in a food processor. Blend until a smooth paste forms.
2. Heat mixture in a large pot over medium then add the remaining olive oil. Continue to cook mixture until fragrant, about 10 minutes
3. Add in cayenne, paprika, chili powder, oregano, coriander, cumin, cinnamon and stir.
4. Add in tomato paste, chocolate, crushed tomatoes and beef stock. Stir to combine.
5. Add in ground beef. Breaking it up with a wooden spoon as you stir.
6. Simmer until beef is cooked and mixture has reduced and become sludgy, about 1 hour.
7. Season with salt
8. Finely dice the remaining onion half.
9. Place spaghetti on a plate, ladle chili over noodles then sprinkle with onion and top with cheddar cheese.
10. Do a big clean up.

Hey y’all! If you’ve never had Cincinnati Chili, you’ve got to give it a try. Here’s my recipe for authentic Cincinnati Chili.
I lived in Ohio for just a couple of months when I was 16, and that is when I fell in love with Cincinnati Chili. Everything about it is amazing. The flavors and aroma, even the texture. I had to recreate this dish and make it my own. Watch my tutorial to see how I make my version of Cincinnati Chili.
Start by browning ground beef. You can use ground turkey, but I prefer beef. Add in a good amount of chopped onions, a little water and a can of tomato sauce, and give it a stir. I use a homemade Cincinnati Chili spice mixture as my local grocer doesn’t carry it prepackaged. My spice mixture is super simple and so good. Add this to the meat along with minced garlic and vinegar. Next add in unsweetened chocolate. You read that right, y’all! Unsweetened chocolate is a key ingredient to authentic Cincinnati chili. It gives it a rich flavor and a nice dark color. Stir until the chocolate is melted. Simmer for 2-½ hours, making sure to stir periodically so the bottom doesn’t burn. There are two popular ways to serve this chili. One way is to serve over a bed of spaghetti and the other is to spoon it over a hot dog. Whichever way you decide, top with shredded cheese and onions, and you’re good to go!
