How To make Cincinnati 5 Way Chili Pt.1
PART ONE:
1 lb Chuck,twice ground finely
2 x Onions, minced
2 x Cloves garlic, minced
1 c Tomato sauce
2 tb Catsup
1 c Water
1 tb Red wine vinegar
1 tb Chili powder
1 tb Paprika
1 ts Pepper
1 ts Honey
1/2 oz Unsweetened chocolate,grated
1/2 ts EA: ground cumin, tumeric
1/2 ts EA: marjoram, allspice
1/2 ts Cinnamon
1/4 ts EA: nutmeg, ground cloves
1/4 ts EA: mace, ground coriander
1/4 ts Ground cardamom
1/2 x Bay leaf, crumbled
1 ts Salt

It is a dish of startling complexity, so dizzingly spicy..." THIS IS A 2 PART RECIPE. Salt a large cast iron skillet. Turn heat to med and add meat, onions, and garlic. Cook until meat is browned. Add tomato sauce, catsup, water, and vinegar. As mixture begins to boil, add everything else. Adjust spices to taste, adding more salt if it needs perking up, turmeric and cumin for a sweatier chili flavor, cinnamon, cloves, and mace if you want it sweeter, cardamom for more bang, unsweetened chocolate for body. Cover and simmer at very low heat for about 1 hr, stirring and tasting occasionally, adding tomato juice if it is getting too dry to ladle up easily. -----

If you're not from Cincinnati this bizarre regional dish may look insane to you but rest assured it's one of the most delicious meals you can make right in your own home.
INGREDIENTS
2 LBS GROUND BEEF
2 TSP SALT
3 TSP UNSWEETENED COCOA POWDER
2 TSP CINNAMON
1 TSP GARLIC POWDER
1 TSP GROUND CUMIN
1 TSP PAPRIKA
¼ CUP CHILI POWDER
½ TSP BLACK PEPPER
½ TSP ALLSPICE
½ TSP GROUND CLOVE
1 TSP SUGAR
1 FINELY DICED YELLOW ONION
6 CUPS WATER
1 6OZ CAN TOMATO PASTE
1 8OZ CAN TOMATO SAUCE
2 TSP WORCESTERSHIRE SAUCE
1 TSP APPLE CIDER VINEGAR
RECIPE
IN A LARGE POT OR DUTCH OVEN COOK TOMATO PASTE ON MEDIUM HEAT UNTIL CARAMELIZED AND A NICE BRICK RED COLOR (ABOUT 4 MINUTES).
ADD IN TOMATO SAUCE, WATER, MEAT.
USE A POTATO MASHER OR WOODEN SPOON TO CRUSH UP THE MEAT UNTIL MIXTURE REACHES A THIN, SOUPY CONSISTENCY.
MIX IN REST OF SPICES, WORCESTERSHIRE SAUCE AND APPLE CIDER VINEGAR.
BRING TO A BOIL AND LET SIMMER FOR 1 HOUR (OR 2 HOURS IF YOU PREFER A THICKER CONSISTENCY).
PREPARE SPAGHETTI OR HOT DOG AND SERVE HOT COVERED IN CHILI AND A MOUNTAIN OF SHREDDED YELLOW CHEDDAR CHEESE WITH A SIDE OF OYSTER CRACKERS AND HOT SAUCE.

Ingredients:
2 lbs ground beef (Or Ground turkey + 1Tbls olive oil for healthier option )
2 cups chopped onions
4 cups beef stock
1 (15oz) can tomato sauce
2 -3 tablespoons chili powder
2 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
2 3/4 tablespoons cocoa
2 teaspoons instant minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
2 bay leaves
finely shredded cheddar cheese (Topping)
chopped onion (optional topping)
kidney bean (optional topping)

How to make Cincinnati Chili in a slow cooker

Ingredients:
2 lbs ground beef or venison
1 large box beef stock
2 TBSP vinegar(red wine vinegar is best, but we had malt vinegar in the camper)
1-2 garlic cloves(we love garlic so we may add some extra in there too)
2 -3TBSP chili powder
5 bay leaves
2 TSP cinnamon
1 tsp allspice
1 TSP cayenne powder
1 1/2 TBSP unsweetened cocoa powder
2 TBSP oregano
Salt and pepper
Sharp shredded cheddar cheese
Cooked spaghetti noodles
TIP: Put all of your spices into the Ziploc bag for easy storage in your RV.
Directions:
1. Crumble the meat into the slow cooker
2. Add the spices and mix into the meat
3. Add the beef stock
4. Cook on low for 8 hours
5. Pour the chili over your spaghetti and top with the cheddar cheese
