How To make Cinnamon Apple Mince Muffins
2 c Unsifted flour
1/3 c Sugar
1 tb Baking powder
1/2 ts Ground cinnamon (or more)
1/2 ts Salt
1 Egg
3/4 c Apple juice
1/3 c Vegetable oil
1 1/3 c Ready-to-use mince filling
1 c Apples, chopped fine
Preheat oven to 400 F. Grease 18 muffin cups or line with paper baking cups. In large bowl, combine all ingreds.; stir only until all ingreds. are blended. Spoon equal portions into prepared muffin cups. Bake 18 to 20 min. or until lightly browned. Cool 1 min. Remove from muffin cups.
Top with Apple Cinnamon Glaze. Serve warm. APPLE CINNAMON GLAZE: In small bowl, mix 3/4 c. confectioners sugar, 1/8 ts. ground cinnamon, and 5 to 6 ts. apple juice. Drizzle over warm
muffins. Hint: Use ice cream scoop (or #20 food scoop) to fill muffin cups. Makes life much easier.

Hi everyone :)
This video was SO much fun and also the first time I’ve ever made pastry myself!
I cheated a little bit with the mince pies by buying the mincemeat and I should have looked into how easy it is to make the filling so I may give this another try before Christmas if I get the time.
These recipes are so delicious and have got us so ready for Christmas.

For the pastry I made the following recipe twice, one for the mince pies and once for the apple pies.
Pastry recipe:
Plain flour – 350g
Butter – 225g
Caster sugar – 120g
Medium egg – 1
Mincemeat – 1 jar
Demerara sugar – Sprinkling
Icing sugar – Sprinkling
- Sift the flour into a mixing bowl add chopped butter and pinch of salt
- Use fingers to combine
- Add caster sugar and egg
- Again, use hands to combine
- Flour worktop and knead dough until smooth consistency
- Wrap in cling film and refrigerate until ready to use
- Grease muffin tray
- Roll out dough to around 4mm thickness
- Cut out x12 10mm circles and x12 8mm circles
- Put the 10mm circles into the muffin tray and press in
- Add mincemeat/apple pie filling into each pastry cup
- Egg wash around the top of the case
- Add the topping to your case
- Egg wash the top and sprinkle Demerara sugar on top
- Bake at 180° for 20mins
- When taking out of the oven, leave in tin for 5/10mins
- Place on cooling rack and sprinkle with icing sugar
Apple pie filling recipe:
Granny Smith apples – 6
Lemon juice – squeeze
Water – 700ml
Brown sugar – 110g
Granulated sugar – 100g
Cornflour – 40g
Cinnamon – ½ tsp
Nutmeg – 1/8 tsp
Butter – 1 tbsp
- Put chopped apples in saucepan and squeeze on the lemon juice
- Pour in water, sugar, cornflour, cinnamon and nutmeg
- Cook until sauce mixture is thick then lower temp and simmer for 10/15mins
- Add butter to pan until melted/combined

Ingredientes:
pastry dough - 400 g (14 oz)
apples - 2 pieces
sugar - 30 g (1 oz)
cinnamon - 10 g (0.35 oz)
IN THE OVEN 180°C (356 °F) /20 MIN
for tea:
strawberries - 100 g (3.5 oz)
orange - 1 piece
apple - 1 piece
kiwi - 1 piece
lemon juice - 20 ml (0.7 fl oz)
green tea - 1 packet
sugar - 30 g (1 oz)
Boil it over medium fire for 3 min

Apple Muffins - 2 cups flour, 3 teaspoons baking powder, 2 tablespoons sugar, 1 cup finely chopped apples, 1 & 1/2 cups milk, 2 & 1/2 teaspoons melted butter and 1 teaspoon salt.
Apple Surprises - 1/2 cup butter, 1/2 cup sugar, 2 beaten egg yolks, 1 desert spoon lemon juice with 1 tablespoon water, 2 cups silk-raising flour, and apple puree for filling.
Hot Apple Muffins - 3 large cooking apples, 1 cup flour, 3 tablespoon lard(or butter), 1 egg, 1 teaspoon baking powder, and 2 tablespoons sugar.

How to Bake Apples at Home
A baked apple can be a delicious dessert idea, especially during the fall season. Learn how to bake apples from this instructional video from BHG.com. Choose a good baking apple, and then slice the stem end of the apple. Use a melon baller to remove the apple core, leaving the base intact. Place the apples in a baking dish and stuff with your favorite filling. Pour liquid into the baking dish around the apples to help them steam. Bake apples at 375 degrees for about 45 minutes or until tender, spooning liquid over the apples occasionally. Remove the apples from the oven and enjoy this sweet treat while they're still warm.
