How To make Cinnamon Raisin Breakfast Biscuits
8 oz Firm silken tofu
1/4 c Apple juice
1 c Wholewheat flour
1 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1 ts Cinnamon
1/4 ts Salt, optional
1/2 c Walnuts, chopped
1/2 c Raisins
1/4 c Maple syrup, optional
Preheat oven to 450F. Oil baking sheets. Blend tofu until smooth. Blend in apple juice & 3 tb maple syrup. Transfer to a mixing bowl & set aside. Sift together the next 6 ingredients. Fold into the tofu mixture. Gently stir in the walnuts & raisins. Turn dough onto a lightly floured board & form into a ball. Roll out dough to a 1/2" thickness. Cut with a cookie cutter. Using a pastry brush, glaze with the remaining syrup if you wish. Bake for 12 minutes. Serve immediately.

Cinnamon Raisin Biscuits
Here's how I made cinnamon raisin biscuits. If you want them to taste like Hardee's biscuits then I recommend using White Lily flour, it's made of soft winter wheat and makes for a light, tender biscuit. If you don't have that flour, it would probably work well with cake flour.
Cinnamon Raisin Biscuits
Dough:
2 cups White Lily all-purpose flour
4 tsp. baking powder
1/2 tsp. salt
1/3 cup sugar
1/2 tsp. cinnamon
4 tbsp. shortening
3/4 cup buttermilk
Filling:
1/2 cup brown sugar
1 1/2 tsp. cinnamon
2 tbsp. vanilla instant pudding mix
1 or 2 tsp. water
Frosting:
1 cup confectioners sugar
1/2 tsp. vanilla
1 or 2 tbsp. milk
Mix together the filling and set aside. For the dough, in a large bowl add the flour, baking powder, salt, sugar and cinnamon. Mix together thoroughly. Add the shortening and cut in until the mixture resembles coarse cornmeal. Add the raisins and buttermilk and mix until it forms a workable dough. You may need to add more flour or more buttermilk to get it to work out right. Turn the dough onto a floured surface, knead a few times until it is pulled together well, roll out the dough about 1/4 thick. Place the biscuits on a pan, add a gob of filling and top with another biscuit. Bake at 425 for 12-15 minutes. Remove from oven and place on a wire rack to cool. While they are still warm ice with the frosting mix. To make the frosting just mix all ingredients together until it's frosting. Enjoy!

Hardees inspired cinnamon raisin biscuits!
Hardee's inspired cinnamon raisin biscuits- Ben and I stopped at Hardees to get breakfast while travelling to Mcrae and we looked for the cinnamon raisin biscuit and they have been discontinued. We were saddened and shocked.So when we arrived to Mcrae 1 hour away, I decided to surprise Ben and Roger with one of their favorite biscuits for our breakfast supper. We made 22 biscuits out of this recipe.
4 cups all purpose flour
3/4 cup shortening
2 cups buttermilk
2 tsp baking powder
1 tsp salt
1 tsp baking soda
1/3 cup granulated sugar
4 tsp cinnamon
1 cup raisins
In a large mixing bowl, combine all the dry ingredients except cinnamon and whisk together. Cut the shortening into small cubes and mix into flour, breaking it up to pea size. Then pour in the buttermilk and mix until pulling away from the side of the bowl. Do not over mix.
Add raisins and fold into batter. Then add cinnamon and mix until well combined. Do not over mix.
Throw some flour down on your solid surface and remove your dough from the bowl and press down dough in about 8 inch round and 1/2 inch thick. Take a biscuit cutter or bench scraper and cut your dough out. Do not twist the cutter, it seals the dough and it won't rise. We used a 2 inch biscuit cutter. Place them on your greased pan, or cast iron skillet. Preheat your oven to 400 degrees. Bake for 10-15 mins or until golden brown. Remove from heat and allow to cool for about 5-10 mins then glaze with confectioner glaze icing and serve warm and delicious y'all!
Glaze-
2 cups confectioner sugar sifted
4 tbsp hot water
1/2 tsp vanilla
Add sifted sugar, water and vanilla and whisk until smooth then drizzle over warm biscuits.
