Easy Peasy Coconut Cream Pie ~ No Bake Coconut Cream Pie
INGREDIENTS:
1 pkg vanilla instant pudding mix
1 pkg coconut instant pudding mix
2 cups milk
3/4 cup shredded sweetened coconut
1/4 cup toasted coconut
8oz container of whipped cream
graham cracker pie crust or baked pie shell
In a large bowl add both puddinx mixes and milk.
Stir for approx 2 minutes until thickens.
Add shredded coconut and stir to combine.
Fold in approximately one cup of the whipped cream and reserve the rest.
Place mixture in prepared pie shell and level out.
Refrigerate for approximately 4 hours or until firm.
Spread the rest of whipped cream on top and sprinkle with toasted coconut.
Refrigerate to store.

Coconut Cream Pie – No Bake Recipe
Ingredients:
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 cups cold milk
2 cups thawed whipped topping, divided
1 cup Coconut, divided
1 ready-to-use graham cracker crumb crust (6 oz.)
Directions:
1. Beat pudding mixes and milk in large bowl with whisk 2 min.
2. Stir in 3/4 cup coconut
3. Fold in 1 cup whipped topping.
4. Pour into pie crust
5. Refrigerate 4 hours or until firm
6. Meanwhile, toast remaining coconut.
7. Top pie with remaining whipped topping
8. Sprinkle with toasted coconut.
9. Serve and Enjoy !!!

This History of Coconut Cream Pie Recipe
There is something so Southern and classy about a homemade coconut cream pie! Getting one on my site was way overdue, mostly since I'm from North Carolina. Now I don't know if this pie originated from the South or if we stole it (and made it better and famous) like we do so many recipes, LOL. Either way, my curiosity got the best of me, and I started digging for the history of this incredible pie. It's hard to believe it didn't originate from the South, being that it's on so many cafeteria and buffet restaurants menu. I couldn't find much history on this pie, but Tux over at Brooklyn Homemade gave me a quick rundown, plus his version of Coconut Cream Pie.

For those who aren't familiar, coconut cream pie starts with a buttery-baked pie crust like this one. Betty's Southern Coconut Cream Pie
Betty demonstrates how to make Southern Coconut Cream Pie. This is an easy, no-fail recipe for a delicious pie.
Southern Coconut Cream Pie
heaping ½ cup sugar (Use a heaping ½ cup sugar if you are using sweetened coconut, ¾ cup sugar if you are using unsweetened coconut.)
¼ cup plus 2 teaspoons cornstarch
1/8 teaspoon salt
3 egg yolks, beaten
3 cups milk
1 ½ tablespoons butter
1 ½ teaspoons vanilla extract
½ cup sweetened flaked coconut
1 baked 9-inch pie crust
¾ cup whipping cream
1/3 cup confectioner's sugar (This is the same as powdered sugar or icing sugar.)
¼ cup toasted coconut
In a heavy saucepan, stir together sugar, cornstarch, and salt. Combine beaten egg yolks and milk, and stir into dry mixture until well-combined. Place over medium heat and bring to a boil, stirring constantly. Boil for 1 minute, stirring constantly. Remove from heat. Stir in butter, vanilla, and sweetened flaked coconut. Cool to room temperature. Place plastic wrap over the top, making contact with the coconut pie mixture, and chill for 4 hours or more. Mixture will be thick. Spoon coconut pie mixture into baked, cooled pie crust. Beat whipping cream until foamy. Gradually add confectioner's sugar, beating until soft peaks (almost stiff peaks) form. Spread over top of coconut pie filling. Sprinkle with toasted coconut. Cover with plastic wrap and chill until firm. Serve on nice serving plates. This pie is great; I hope you love it! Love, Betty ♥

Makes 6 individual (5-inch) pies
Crusts
1 recipe 2-crust pie dough, shaped into 2 logs and chilled
Coconut Cream Filling
1 (398 mL) tin coconut milk
2 tsp (10 ml) vanilla bean paste or vanilla extract
5 large egg yolks
1/3 cup (70 g) sugar
5 Tbsp (38 g) cornstarch
3 Tbsp (45 g) unsalted butter, room temperature
1 Tbsp (15 ml) rum (optional)
2/3 cup (70 g) sweetened flaked coconut
Topping and Assembly
2 cups (500 ml) whipping cream
3 Tbsp (38 g) sugar
2 Tbsp (8 g) skim milk powder
1 tsp (5 ml) vanilla extract
lightly toasted sweetened flaked coconut, for garnish
1. For the crusts, pull the dough out of the fridge 20 minutes before rolling. Slice each log into 3 pieces and roll each piece out on a lightly floured work surface to just under ¼-inch thickness. Lightly dust six 5-inch individual pie shells with flour and line each with pie dough, trimming the edges completely. Chill the pie shells for 20 minutes.
2. Preheat the oven to 400 F (205 C). Dock the bottom of each pie shell with a fork and place an empty pie pan over each shell. Turn the pie shells upside down and place them on a parchment-lined baking tray. Bake the shells for 8 minutes at 400 F (205 C), then turn the oven down to 375 F (190 C) and bake for another 8-10 minutes until golden. Flip the pie shells right side up, remove the top pie pan and let the shells cool.
3. For the coconut cream filling, heat the coconut milk and vanilla bean paste (or extract) in a pot until just below s a simmer. Whisk the egg yolks, sugar and cornstarch in a bowl and then slowly pour in the hot coconut milk while whisking. Return the mixture to the pot and whisk over medium heat until the custard is thick and glossy, about 5 minutes. Pour this through a strainer and stir in the butter and rum (if using), then stir in the coconut. Place a sheet of plastic wrap directly on the surface of the custard, cool to room temperature, then chill until set, at least 3 hours.
4. To assemble, whip the cream to a soft peak and then whip in the sugar, skim milk powder and vanilla.
5. Stir the coconut cream filling to soften (it will be quit firm) and then fold in ¾ cup of the whipped cream. Spoon this into the cooled tart shells and spread to level. Pipe or dollop the remaining whipped cream onto each pie and sprinkle each with a little toasted coconut. Chill until ready to serve.
The pies can be stored, refrigerated, for up to 2 days.
