How To make Coffee Coffeecake with Espresso Glaze
Cake: 2 c Flour
1 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
3/4 c Unsalted butter, softened
1 c Sugar
2 lg Eggs
2 ts Vanilla
1 c Sour cream
2 tb Instant espresso dissolved i
1 tb Hot water
Glaze: 3 tb Strong brewed coffee
1 1/2 ts Instant espresso powder
3/4 c Confectioner's sugar
Into a bowl, sift together the flour, baking powder, soda, and salt. In another bowl with an electric mixer, cream the butter, and add the sugar gradually, beating, and beat the mixture until it is light and fluffy. Add the eggs, one at a time, beating well after each. Beat in the vanilla. Add the flour mixture alternately with the sour cream, beginning and ending with flour, and blending the batter after each addition. Transfer about a third of the batter to another bowl and stir in the espresso mixture, stirring until the batter is well combined. Spoon half the plain batter into a well-buttered 8-inch bundt pan, spreading it evenly. Spoon the coffee batter over the plain, spreading it evenly and spoon the remaining plain batter on top, spreading it evenly. Bake the cake in the middle of a preheated 350f oven for 55-60 minutes, or until it is golden and a tester comes out clean. Let it cool in the pan on a rack for 30 minutes. Invert the cake onto the rack and let it cool completely. In a bowl, stir together 2 Tbsp of brewed coffee and the espresso powder, stirring until the powder has dissolved. Sift the conf. sugar and add it, stirring until it is combined well. If necessary, add more coffee to obtain a pourable consistency. Pour the glaze over the coffeecake and let the cake stand for 10 minutes or until the glaze has set. Serve warm. a 1989 Gourmet Mag. favorite

Coffee Buttercream Frosting Recipe
Learn how to make this easy and delicious coffee buttercream, perfect for filling and frosting cakes, cupcakes, macarons, and more! It's silky smooth, packed with decadent coffee flavor, and pairs well with almost any dessert. Get the full recipe on my blog here:
Coffee Buttercream Recipe:
Ingredients:
1 Cup (227g) unsalted butter, room temperature
3 ½ Cups (420g) powdered sugar
2 tsp vanilla extract
1 ½ tsp instant coffee or instant espresso powder
1 ½ Tbsp whole milk, room temperature
¼ tsp salt, or to taste
Instructions:
1. Combine the instant espresso/coffee with the whole milk and set aside. In the bowl of a stand mixer, cream the butter on med-high until light and fluffy (about 5 minutes), scraping down the bowl and paddle a few times in between.
2. Add the powdered sugar a few cups at a time, scraping down the bowl and paddle between intervals. Then add the vanilla, the coffee/espresso milk mixture, and salt. Mix on low until fully incorporated, about one minute.
Recipe Notes:
To Make Ahead: store in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring it back to room temperature and re-whip in your stand mixer to bring back to smooth buttercream consistency.
Quantity: this recipe makes enough to frost 12-15 cupcakes, or fill and frost one 2-layer cake. If using for filling and frosting a 3-layer cake, I recommend making 1.5x the recipe (multiply each ingredient by 1.5).

coffee whipped cream frosting:
Ingredients:
1 cup whipping cream(240ml)
2 tablespoons powdered sugar
1 teaspoon instant coffee powder + 1tbsp water.
1/2 teaspoon vanilla extract
Instructions:
In a small bowl, dissolve the instant coffee powder in 1 tablespoon of hot water. Stir until the coffee is fully dissolved. Set aside to cool.
In a large mixing bowl, pour in the heavy whipping cream. Using an electric mixer or a stand mixer, whip the cream on medium speed until it begins to thicken.
Gradually add the powdered sugar into the whipping cream while continuing to beat. Increase the speed to high and whip until soft peaks form.
Add the cooled coffee mixture and vanilla extract to the whipped cream. Beat on medium speed until well combined and stiff peaks form. Be careful not to overbeat, as the cream can become grainy.
Once the desired consistency is reached, your coffee whipping cream frosting is ready to use. You can either use it immediately or refrigerate it for later use.
This frosting goes well with cakes, cupcakes, or other baked goods. It has a subtle coffee flavor that adds a delightful touch to your desserts. Enjoy.

coffee mirror glaze:
Ingredients:
100 grams granulated sugar(1/2cup)
60 milliliters water(1/4cup)
1/4cup heavy cream(60gm)
1tbsp unsweetened cocoa powder
1tsp instant coffee powder
1tbsp powdered gelatin
3tbsp cold water
Instructions:
In a small bowl, mix the powdered gelatin with cold water and let it bloom for about 5 minutes until it becomes spongy.
In a saucepan, combine the granulated sugar, water, heavy cream, cocoa powder, and instant coffee, Place the saucepan over medium heat and stir the mixture until the sugar has completely dissolved and the ingredients are well combined. Do not let it boil.
Remove the saucepan from heat and add the bloomed gelatin. Stir well until the gelatin is completely dissolved.
Pass the mixture through a fine-mesh sieve to remove any lumps or impurities.
Allow the mixture to cool to room temperature. Make sure it doesn't start setting, but it shouldn't be warm either.
Once the glaze has reached room temperature, you can use it to coat your cake or pastries.
Pour the glaze over the chilled cake.
Note: The mirror glaze will have a shiny, glossy appearance once it sets. You can refrigerate the cake after glazing to help the mirror effect set properly.
