Colcannon is a traditional Irish dish of boiled potatoes mixed with Kale or Cabbage. In this video, we have used Kale. It’s a cheap, quick and easy way to satisfy hunger and is great served with boiled bacon, or your favourite main. We’re sure you’ll love this little taste of the Emerald Isle. This recipe serves 4 as a side dish.
Ingredients:
4 – 6 potatoes peeled and cut to be roughly the size of a tennis ball
300 Gr Kale or Cabbage, stalks removed, washed and chopped.
100 Ml approx. Milk
2 Spring Onions washed, trimmed and sliced
Salt and Pepper to taste at the table,

This creamy delicious Colcannon recipe is loaded up with braised cabbage and tossed with crispy bacon and leeks. You will only want to eat mashed potatoes like this from now on after tasting these.
Colcannon is a traditional Irish recipe consisting of mashed potatoes and cooked cabbage. It also had some nuances to it as ingredients were added, or taken away, depending on what was available in the garden. You may see some colcannon recipes with pork, and you may not.
This is commonly served on big occasions and widely celebrated at Halloween in Ireland. Colcannon is a staple side dish at big occasions with friends and family alongside pork or lamb, but it is absolutely filling enough to eat it as is as a main course.

Ingredients for this recipe:
• 8 ounces unsalted butter
• 1/3 cup whole milk
• 1/3 cup heavy whipping cream
• 8 ounces sliced bacon, thickly sliced
• 1 thinly sliced leek
• 1 head thinly sliced savoy cabbage, stem removed
• 2 pounds peeled and thinly sliced russet potatoes
• 2 pounds peeled and thinly sliced Yukon gold potatoes
• 1 bunch thinly sliced green onions
• salt and ground white pepper to taste

How to make a Saint Patrick's Day dish: Irish Colcannon recipe
My dad's side of the family is very Irish (my mom's side is Italian!). Since Saint Patrick's Day is right around the corner, I thought I should do something to acknowledge my heritage!
So I'm showing you guys how to make colcannon! It's a traditional Irish dish, made up mostly of potatoes and cabbage (or kale). There are regional variations to this recipe (you can use ham instead of bacon, sometimes leeks are use, etc.), so in the video I show the way that I learned how to make it.
It's a very filling, satisfying meal. You want to eat something like this before you go for a long bike ride or a hike!

Here's what you'll need to make colcannon:
About 6 or 7 large russet potatoes, peeled and quartered
One head of green cabbage (I like savoy cabbage), chopped; you could use kale here instead
1 cup of milk
A bunch of chopped scallion
Fresh parsley, chopped (to taste); this will garnish
Butter, melted (to taste); this will garnish
Bacon, cooked--nice and crispy!; this will be garnish; you could use ham here instead, and some people mix it right in instead of using it as a garnish
Egg (fried in the bacon fat!); to top the dish
Directions:
Boil the chopped cabbage, then let simmer for about 10 minutes. Drain that into another pot to reserve the cooking liquid. Use that liquid to boil the potatoes. Then bring it to a simmer and cover for 15-20 minutes, until the potatoes are tender.
While the potatoes are boiling, cook the bacon (making sure to reserve the fat to fry the egg!)
Mix the milk and scallions in a saucepan and bring to a boil. As soon as it starts boiling, remove it from the heat.
Drain the potatoes and then mash them! Add the milk and scallion mixture and beat until well blended.
Mix in the cabbage and salt and pepper.
Fry an egg in the bacon fat.
Put the potato and cabbage mixture in a bowl and drizzle on some melted butter. Add the egg, bacon, and parsley.
If you like spicy things, I highly recommend adding a bit of hot sauce, too :)

Welcome back to What’s For Tea. Today I made Colcannon! Also known as Irish mashed potatoes. Absolutely delicious and so easy to make, and a great side for almost anything :)
Having done a wee bit of research there’s seems to be no set ‘recipe’ and no two people make colcannon the same way. Some people use cabbage, others say you should use kale :) Some say not to use butter or cream because traditionally this would have been too expensive to use back in the day. Then there’s the bacon argument…use it it don’t use it, its’ up to you! But I think it’s adds a lovely flavour and much needed texture. However you end up making it, I hope you enjoy.
I’ve listed everything I used below…in case you want to give it a go for yourself.

Here’s what I used (serves 4-5 people as a side)
2 lbs / 1kg Potatoes - peeled and cut into large chunks
120g /4.2 oz Kale or cabbage - roughly shredded
6 Bacon rashers - roughly cut into bite size pieces
1 Medium brown onion - Thinly sliced
Butter for frying
A splash of single cream
Salt & pepper to taste
