Lemon Cool Whip Cookies
Fresh and sunny, these simple lemon Cool Whip cookies are a delightful citrusy treat. Full of lemon flavor, you only need five ingredients to make these chewy cookies that are rolled in powdered sugar to give them a sweet crinkle pattern once baked.

INGREDIENTS
15.25 ounces lemon cake
8 ounces Cool Whip, thawed
1 large egg, room temperature
2 teaspoons lemon zest
2 cups powdered sugar
INSTRUCTIONS
Preheat the oven to 350°F. Line a baking sheet with parchment paper and set it aside.
Using a medium-sized mixing bowl and a handheld mixer on medium speed, beat together the cake mix, Cool Whip, egg, and lemon extract until well combined.
Use a 1 tablespoon cookie scoop to scoop out the cookie dough.
Gently roll the dough balls in the powdered sugar.
Place the rolled dough balls 1½ inches apart. Bake for 8 to 9 minutes, or until the cookies are just beginning to become golden around the edges. Allow the cookies to rest on the baking sheet for 2 to 3 minutes before transferring to a cooling rack.

Christmas Crinkle Cool Whip Cookies are a blast to make with the kids! Everyone loves these easy Christmas cookies, just be ready to get a little messy!
The really great thing about these cookies is that you can change out the food coloring colors for any holiday.
Halloween - green, orange, and purple
4th of July - red and blue (white from the powdered sugar)
Valentine's Day - red and pink
INGREDIENTS
1 box vanilla cake mix
1 egg, lightly beaten
1 tub of Cool Whip, equal to 3 cups
1 teaspoon vanilla
Red & green gel food coloring (liquid food coloring is fine too)
1 cup powdered sugar
INSTRUCTIONS
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a Sil-Pat.
In a large mixing bowl, beat together the cake mix, egg, cool whip and vanilla. The dough will be thick and sticky.
Divide the dough in half and place one half in a second bowl. Add a couple drops of red food coloring to one bowl and a couple drops of green food coloring to the other bowl. Mix the food coloring into each half of the dough. Add more food coloring as needed until your desired color is reached.
Put the powdered sugar into a small bowl.
Use a small cookie scoop (or 1 tablespoon measuring spoon) to portion the dough into the bowl of sugar. One scoop at a time, place the dough into the sugar and roll it around until it is completely coated. Place the dough ball onto the prepared baking sheet. Repeat with the remaining dough, leaving 2-inches between each cookie. (Seriously, the cookies spread A LOT.)
Bake for 12 to 15 minutes or until the cookies are set. The center of the cookie will still be soft, that's okay.
Remove from the oven and let cool on the baking sheet for 5 minutes. Carefully transfer the cookies to a wire rack to cool completely.

These Cool Whip Cookies are so easy and delicious! Any cake mix will work so pick your favorite and make some yummy cookies. You can also adapt this recipe to accommodate a sugar free, low calorie diet. When you eat a cookie it's like your taking a little bite of your favorite cake!

1 box of your favorite cake mix
1 egg
1 (8 oz.) container of whipped topping
1/2 cup powdered sugar (optional)
Instructions
In a large mixing bowl combine the cake mix, egg, and whipped topping. Stir until completely combined. Make small dough balls using a cookie scoop or spoon, and roll them in powered sugar, then place of a baking sheet lined with parchment paper. Bake in a 350 degree oven for 8 to 10 minutes and then place them on a cooling rack.
