: optional Preheat oven to 300 degrees. Prepare crust; set aside. In a medium bowl, beat egg yolks until light. Blend in salt, lemon juice, vanilla, almond extract, sugar, flour and lemon peel. Put cottage cheese into a large bowl. Add a small amount of egg yolk mix ture. Beat on high speed until curd is broken and nearly smooth. Add remaining egg yolk mixture and sour cream; beat untill blended. Beat egg whites until stiff, but not dry. Fold into cheese mixture. Pour into crust. Bake 1 hour. Ingredients:
- 2 eggs (separate into egg white and yolk)
- 250g cottage cheese
- 70mL milk
- 40g sugar
- 50g self-raising flour (OR 50g all purpose flour + 1/2 teaspoon baking powder)
- 120g frozen berries
- -butter and plain flour to coat the cake tin
Recipe:
1. Prepare the cake tin by coating it with butter then flour. Place it in fridge until later use.
2. Separate egg yolk and white.
3. Mix egg yolk, milk and strained cottage cheese well.
4. Sift self-raising flour and combine.
5. Whisk egg while in a separate bowl until firm meringue forms. Add sugar half way through.
6. Combine meringue and batter gently. *Make sure not to over mix
7. Pour batter into cake tin.
8. Decorate with frozen blueberries.
9. Bake at 170°C for ~30minutes.
10. Let it cool and rest it in fridge for 2-3hours.
11. Ready to enjoy.

Easy peasy COTTAGE CHEESE CHEESECAKE | Cooking ASMR
INGREDIENTS for 23cm / 9 pie dish:
▪️ 500g cottage cheese / I use 2% fat
▪️ 4 eggs
▪️ 40g corn starch
▪️ 60-70g sugar / or to taste / I usually use substitute (erythritol + monk fruit)
▪️ 1 tsp vanilla extract (could be coconut, almond, orange, etc.)
▪️ zest of 1 lemon
▪️ 75g raisins (dried apricots, dried cranberries or cherries)
▪️ 10g butter for pie dish
1️⃣ Preheat oven to 350ºF/175ºC
2️⃣ Rinse raisins with hot water. Dry with paper towel.
3️⃣ Separate egg yolks and egg whites.
4️⃣ Blend together egg yolks, cottage cheese, vanilla extract and zest.Mix in corn starch and raisins.
5️⃣ Whisk egg whites with sugar (or substitute) in a separate bowl until soft peaks. Combine meringue and batter gently (in 3 steps).
5️⃣ Prepare a pie dish by coating it with butter.
6️⃣ Pour batter into pie dish. Bake 40-45 minutes. If it starts to burn, but has not yet been baked, reduce the temperature a little.
7️⃣ Let it cool 30-40 min. Eat warm or cold.

500 gr of cottage cheese
100 gr of cornstarch
100 gr of sugar

METHOD
Separate the whites from the egg yolks. Beat the egg whites very firm with a pinch of salt. Beat the egg yolks with the sugar until they whiten and double in size. Add the cottage cheese and mix. Add cornstarch with lemon zest or vanilla extract. Incorporate the whites into snow gently without breaking them little by little. This is the secret of the cake! Even if the whites are not totally incorporate it does not matter! The dough should not be smooth. Pour the mixture into the mold. Bake and cook for about 30 minutes.
Prepare fruit and hazelnut dressing.
To prepare the fruit dressing, cook 150 g of berries with 50 g of vanilla sugar, let cool to room temperature and pour over the cake
