How To make Cottage Cheese and Oil Pastry(3)
4 1/2 oz (125g) cottage cheese
(well pressed out) 4 tb Milk
Egg yolk 1/2 x Egg white
4 tb Oil
1 t Salt
9 oz (250g) plain flour
1 pk (16g) Backin
rub the cottage cheese through a fine sieve, if desired and mix with the milk, egg yolk, and 1/2 egg white, oil and salt. mix and sieve together the flour and the Backin and add to the mixed ingredients, a little at a time, until slightly more than half has been used. Knead in the rest of the flour.

Ingredients:
For the crust:
2¼ cups (280g) flour
3/4 cup (170g) cold butter, cubed
1 teaspoon salt
4-6 tablespoons cold water
For the filing:
14 oz (400g) fresh spinach
1 yellow onion
1 red onion
2 garlic cloves, crushed (optional)
3 eggs
1 cup (240 ml) heavy cream
7 oz (200g) gruyere cheese
3oz (90g) blue cheese such as gorgonzola
1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon nutmeg
Butter + olive oil for frying
Method:
1. In a food processor process flour, salt and cold cubed butter. process until crumbs are formed. Add cold water, process until dough is formed. Do not over mix.
2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 30 minutes.
3. Meanwhile make the filling: chop onions. In a large pan, melt 2 tablespoons butter and some olive oil. Add chopped onions and sauté for 5 minutes. Add crushed garlic and spinach. Cook until wilted and reduced in size. Drain.
4. In a large bowl beat eggs, heavy cream, salt, pepper and nut meg. Set aside.
5. Roll out the dough on a lightly floured board. Lightly dust the top of the dough. Roll until the dough is about 1/8 inch thick. Transfer the dough to a 9-10-inch (24-25cm) pie pan. evenly press the pastry onto the bottom and up the sides of your pan. Trim off the excess dough off the top of the pan. Gently pierce the bottom of the crust with a fork. Transfer to the freezer for 30 minutes.
6. Preheat oven to 350F (175C)
7. Blind baking: line a parchment paper over the dough. Fill with dry beans, rice or pie weights. Bake for 15 min. Remove the weights and the parchment paper. Return to oven for another 5-10 minutes or until crust is slightly golden. Remove from oven.
8. Sprinkle the spinach into the pie crust, sprinkle shredded gruyere cheese and cubed blue cheese. Pour the eggs and cream mixture over the spinach and cheese.
9. Bake until golden brown and set, about 35 minutes. Allow to cool slightly.

Savory Phyllo Pastry with beer: every slice is warm and simply tasty!
Wonderfully flaky and with a satisfying crunch, filo pastry! INGREDIENTS
Phyllo dough;
3 eggs;
2/3 cup milk;
½ cup butter, melted;
1 tsp baking soda;
Salt to taste;
1 cup cheese;
1 cup cottage cheese;
½ cup parsley, chopped;
½ cup scallions, chopped;
½ cup beer.
METHOD
Preheat oven to 200C/400F.
Whisk eggs with melted butter, baking soda and salt.
Combine shredded cheese with cottage cheese and chopped greens. Season with salt and pepper to taste.
Layer 5 sheets of phyllo pastry into a baking sheet spreading egg and butter mixture in-between. Top with cheese mixture and continue layering phyllo with eggs and butter until you fill-up the baking pan.
Slice the cake into portions and pour ½ cup beer on top. Bake for 40-50 minutes or until golden and crispy on top.

You can easily make breakfast with pastry sheets and cottage cheese. If you want you can start arranging with two crusts from below and then arrange the crumpled crusts.Anyway is delicious!

- 1 cup of oil
- 1 tbs baking powder
- 100 ml sparkling water
- 500 gr cottage cheese
Bake on 400F/200C for 35 min.

Lako je napraviti guzvana gibanica. Mozete da pocnete redenje so dve kore prave i onda odozgo pocnes da regjas guzvane. Svakako je ukusna!
Recept:
- 5 jaja
- 1,5 solja kiselo mleko ili jogurt
- 1 solja ulje
- 1 prasak za pecivo
- 100 ml kisela voda
- 500 gr sir ili urda
U zavisnost debeline kore, ako vam ne stigne fil, onda dopravite za da bude dovoljno za sve kore.
Pecite 35-40 min na 200C.
