How To make Cranberry Poppy Seed Loaf
2 1/2 c All-purpose flour
3/4 c Sugar
2 tb Poppy seed
1 Tbl. baking powder
1 c Skim milk
1/3 c Fleischmann's margarine,
-melted 1/4 c Egg Beaters (or other egg
-substitute) 1 ts Vanilla extract
2 ts Grated lemon peel
1 c Fresh or frozen cranberries,
-chopped Confectioner's Sugar Glaze (optional) Grease bottom of an 8 1/2 X 4 1/2 X 2 1/2" loaf pan; set aside. In large bowl, mix flour, sugar, poppy seed and baking powder; set aside. Blend milk, margarine, egg substitute, vanilla and lemon peel; stir into flour mixture just until moistened. Stir in cranberries; spread in prepared pan. Bake at 350^ for 60-70 minutes or until done. Cool. Drizzle with glaze if desired. Makes 12 servings. Nutrition Information per serving: 216 calories, 172 mg. sodium, 0 mg. cholesterol, 6 gram total fat (25% calories from fat), 1 gm saturated fat, 1 gm dietary fiber.

CRANBERRY & LEMON POPPY SEED BISCOTTI PLANT-BASED
VEGAN CRANBERRY & LEMON POPPY SEED BISCOTTI
Enjoy making holiday cookies early and store them in an airtight container. You can store the biscottis in the freezer until you are ready to serve. Just place it on the counter to defrost when you are ready to serve.
Dough:
3 cups all-purpose flour plus extra if needed
1 teaspoon baking powder
¾ cup vegan sugar
½ teaspoon sea salt
¾ of a can of coconut unsweetened milk
1 teaspoon pure vanilla extract
¼ cup lemon juice
⅓ cup grapeseed oil
1 teaspoon white distilled vinegar
½ cup dried cranberries
¼ cup poppy seeds
Brown sugar to sprinkle on the top
Technique:
Preheat the oven to 375° F.
Line one baking sheet with parchment paper and set it aside. In a large bowl, combine the dry ingredients and mix well. In a small mixing bowl, add the ¼ of a cup of coconut milk, grapeseed oil, vinegar, pure vanilla extract, lemon juice, and mix well . Whisk the wet ingredients into the dry, fold in the other ¼ cup of coconut milk. Fold in the poppy seeds and cranberries.
Flour a cutting board and place the dough on the board to be kneaded, adding additional flour to get a less tacky consistency. Split the dough to form two logs and top with brown sugar, place in the oven, and bake for 30 minutes.
Remove from the oven and slice into ½-inch thick biscotti. Place the cookie back on the baking sheet and bake until golden, flip, and again bake until golden. Remove to cool. Store in an airtight container or enjoy with tea or coffee!!
