How To make Cranberry Pumpkin Nut Bread
3/4 c Butter; or margarine
1 ts Salt
2 c Sugar
2 ts Cinnamon
3 Eggs
1 cn Pumpkin; (16 oz.)
3 1/2 c Flour
1 c Nuts; chopped
1 1/2 ts Baking soda
2 ts Orange rind; grated
1/2 ts Baking powder
1 c Cranberries; chopped
Cream butter and sugar. Add eggs, 1 at a time, mixing well after each addition. Combine dry ingredients, and add alternately with pumpkin. Stir in nuts, rind and cranberries. Pour batter into 2 greased and floured 9x5-inch pans. Bake at 350 degrees for 60 to 65 minutes. May be frosted, if
desired. Makes 2 loaves. -----

Healthy Pumpkin Cranberry Bread Recipe
Check out this recipe for Mimi’s Pumpkin cranberry quick bread! This healthy recipe is insanely versatile and it can also be made into muffins! We use a basic boxed oat bread from Krusteaz and chock it up with real pumpkin, fresh cranberries, flax seeds and walnuts. You really can’t mess this bread up so try your own variations! Mimi is my husbands mom—she’s always trying new things in “Mimi’s bread”. One thing I will say is that when she sends us home with one, it never lasts long in our house or anyone else’s for that matter!
-Krusteaz oat bread (follow the recipe for measurements of oil and water)
-15 oz of canned pumpkin
-1.5 C chopped walnuts (I used chopped but Mimi usually fresh grinds her’s)
-2/3 bag fresh cranberries (however much you like cranberries really)
-1/2 C ground flaxseeds
Directions- preheat oven to 400 degrees. Combine all ingredients in a bowl and mix until combined. Bake in a lightly oiled bread pan for 40-42 minutes. Enjoy!

This bread is your best recipe when trying out making bread for the first time! The recipe is so forgiving and it doesn't take a lot of steps to make! Make Cranberry Pumpkin Bread with ORGANIC INDIA
Ingredients:
- 1 cup of oats
- 1 cup of dried cranberries
- 1/2 cup of pepitas
- 1/2 cup chopped walnuts
- 1 Tbsp ORGANIC INDIA ginger powder
- 1 Tbsp pumpkin spice
- 6 capsules of ORGANIC INDIA Cinnamon, contents only
- 1/3 cup ORGANIC INDIA Whole Husk Psyllium
- 1 Tbsp raw honey
- 1/4 cup water
- 1 cup pumpkin puree
- 1/4 cup coconut oil, melted
- 1/4 cup chia seeds
Directions: Mix the dry ingredients in a large bowl and stir. Add the wet ingredients and mix well. In a lightly greased baking loaf pan, spoon the mixture in and bake at 375 degrees Fahrenheit for about 45 minutes.
