How To make Creamy Cheesecake (The Birthday Cheesecake)
4 pk (8 oz. ea) cream cheese
2 ea Med eggs
1 c Sugar, less 2 Tbsp.
1 ts Vanilla
2 tb Cornstarch
1 c Sour cream
1 ts Almond extract
Crust: 2 c Graham cracker crumbs
1 ea Stick of butter, melted
2 tb Sugar (from above cup)
For crust: Mix the 2 T sugar with crumbs. Add melted butter. Place in a 9" springform pan. (Mixture will go at least 1" up the sides.) Chill
this crust in the freezer while you make the filling. Filling: Preheat oven to 450. Beat the cream cheese with sugar, eggs, vanilla and cornstarch. (A food processor works great for this.) Blend until very smooth. Add the sour cream and almond extract. Pour into the chilled crust. Bake 10 minutes. Reduce temperature to 200 and bake for 45 minutes more. Now turn off the oven completely and leave cheesecake in with the door slightly ajar for 2 or 3 more hours. Chill. This is the creamiest cheesecake we've ever had!! -----

Chiffon cake roll
all purpose flour 130 grams (1 cup)
sugar 90 grams ( 1/3 cup + 1 tbsp)
cornstarch 20 grams ( 1 tbsp + 1 tsp)
salt 2 grams (1/4 tsp)
baking powder 5 grams (1 1/4 tsp)
eggyolks 6 large
oil 60 grams (1/4 cup)
warm milk 75 grams ( 1/3 cup) Fullcream or evap
vanilla 1 tsp
eggwhite 6 large
sugar 100 grams 1/2 cup
cream of tartar 1/4 tsp or lemon
SMBC: swiss meringue butterceam
eggwhites 75 grams (1/3 cup)
sugar 150 grams (2/3 cup)
butter 140 grams (1 1/2 cup)softened
creamcheese 1 pack 226 grams (1 1/2 cup)
Baking time : 18 to 20 minutes (use a toothpick to check the doneness of your cake.
Oven temp: 160°c

Basque Burnt Cheesecake Recipe | Creamy and gooey easy cheesecake
A simple cheesecake that is the opposite of what you would imagine the perfect cheesecake to be.
Overly dark on the top, no biscuit or sponge base, and without the use of a water bath in the baking process. It's as simple as a cheesecake could get.
I had a small obsession with this cake ever since I laid eyes on it. Visually it stole my heart, and although I have never tasted the original slice of this cake from Basque, I have tried my best to recreate what I imagine it to be and this is my take on that cake.
