Sausage and chicken creole (crockpot)
1 pound boneless skinless chicken breasts
12 ounces smoked Andouille sausage, cut into small rounds
1 cup chopped onions
2 cloves minced garlic
1 1/4 cup low sodium chicken broth
1 can (14.5 ounces) diced tomatoes
3 tablespoons tomato paste
1/2 cup tomato sauce
2 teaspoons Creole seasoning
1/4 teaspoon cayenne
green pepper
1 tablespoon brown sugar
(Optional to use)
14 ounce can black beans, rinsed and drained
1/2 cup sliced green onions for topping
brown rice for serving
Sour cream
Cheese
Place the essential ingredients in the crockpot. Cover and cook on low for 6-8 hours or high for 3 hours.
Shred the chicken directly in the crockpot to your desired texture. Add the extras, if you want, and cover and cook for another 20-30 minutes. This is also a great time to make your rice, if you’re serving it with rice. When everything is ready, taste the chicken mixture and season with salt. Serve the creole chicken over rice and topped with green onions.

Ingredients:
2 lb chicken, cut up in serving sizes
1 green bell pepper, large, chopped
1 medium stalk celery, about 7 to 8 inches long, chopped
2 bay leaves
1 tsp dried thyme
1 tsp dried basil
1 tsp dried oregano
1 tsp salt
1 tsp black pepper
½ tsp cayenne pepper
6 green onions, chopped
2 tbsp Worcestershire sauce
16 oz dried tomatoes, (1 can)
6 oz tomato paste
1 lb cooked ham, cut into 1-inch cubes
1 tsp hot pepper sauce, more or less depending on preference
½ lb Polish sausages, sliced diagonally
To Serve:
1 cup white rice, cooked or mashed potato per serving

0:10 In a slow cooker, combine all the ingredients except for the sausage.
0:34 Cover and cook on low for 5 hours.
0:36 Turn the slow cooker to high.
0:38 Add the sausage.
0:42 Cover and cook for 15 to 20 minutes or until the sausage is heated through.
0:44 Serve on top of rice or mashed potato and enjoy!

Chicken Creole Ingredients
4 to 6 Chicken Breasts (boneless, skinless and cut into inch size pieces)
1/4 cp Oil
1 medium Onion, chopped
1 Green Pepper, chopped
1 cp Celery, chopped
1 14.5 oz can Petite Diced Tomatoes, undrained
1 cp Chicken Broth
1 6 oz can Tomato Paste
1/4 tsp Black Pepper
1/2 tsp Salt
1/2 tsp each of the following (Dried Basil, Oregano, Thyme, Marjoram, and minced Garlic)
2 cups Rice (cooked according to package directions.)

Chicken with vegetables (Crockpot)
INGREDIENTS
4 boneless, skinless chicken breasts
1 pound red potatoes, halved
1 pound baby carrots
1 pound green beans, trimmed
1 cup reduced sodium soy sauce
1/2 cup honey
2 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon ground black pepper
INSTRUCTIONS
Put chicken breasts, potatoes and carrots in a 6-7 quart slow cooker.
In a separate bowl whisk together soy sauce, honey, garlic, basil, oregano and pepper.
Pour the soy sauce mixture over the chicken and vegetables. Cook on low for 7-8 hours or on high for 3-4 hours. Add the green beans during the last 30 minutes of cooking time.
