Najsočnija Orahnjača i Makovnjača / Amazing Walnut and Poppy Seed Rolls
SASTOJCI / INGREDIENTS
- 600g brašna (250g oštrog-TIP400 i 350g glatkog TIP550)
600g flour (250g continetnal and 350g all purspose)
- 320g šećera + 1 žlica
320g sugar + 1 tbsp
- 20g svježeg kvasca (ili 7g suhog)
20g fresh yeast (or 7g dry)
- 4 žličice + 2 žlice vanilin šećera.
4 tsp + 2 tbsp of vanilla sugar.
- 3 žumanjka
3 egg yolks
- 1 bjelanjak
1 egg white
- 200g maslaca
200g of butter
- korica limuna
lemon zest
- 450 ml mlijeka (ISPRAVAK* ide 200ml u kvasac)
450 ml of milk (*200ml into yeast)
- pola žličice soli
half tsp of salt
- 1 žlica ruma
1 tbsp of rum
- 250g mljevenih oraha
250g ground walnuts
- 200g mljevenog maka
200g ground poppy seed
- 1 žlica pšeničnog griza
1 tbsp wheat semolina
- šećer u prahu
caster sugar
- papir za pečenje
parchment paper
- plastična folija
plastic foil

Poppy Seed Povitica | Pastry Maestra
In Croatia, nut roll is a very popular dessert, especially around Christmas time. Povitica (pronounced pov-e-tee-za) or povetica is just another term for a nut roll.
The thing is, all around Croatia there are different recipes for this lovely sweet bread, with whole variety of fillings, depending on the origin of the recipe. In continental parts there is walnut or poppy seed roll, in Istria, you will find a moist apple and walnut filling while you could easily stumble upon carob roll in Dalmatia.
Nut rolls, however, are not exclusively Croatian; you will find them in most Eastern European countries around Christmas time, and they are all delicious, especially when served with a cup of tea or coffee.
