Slow Cooker Meatloaf
In this video, I make a delicious slow cooker meatloaf that cooks in a tasty sauce made of ketchup, mustard, Worcestershire sauce and a touch of brown sugar.

I recommend cooking some sides to go with this meatloaf. Some roasted vegetables go great with this recipe, you can even cook them in the slow cooker if you want to.
Any leftovers are worth keeping as they will heat the next day nicely. I fried my leftovers the next day, and they were almost as good as when they were fresh.
You shouldn’t need any sauces to go with this dish as the one we pour over the meatloaf should be more than enough. If you’re worried, then you can always double the sauce ingredients.

Meatloaf
1kg (2.2 lb) ground beef
2 tsp. garlic crushed
2 eggs
1 onion, minced
½ Tbsp. oregano leaves
½ Tbsp. Parsley
½ cup milk
1 & ½ cups breadcrumbs
1 tsp. salt
¼ tsp. pepper
Sauce
½ cup ketchup
2 Tbsp brown sugar
1 Tbsp. Dijon mustard
1 tsp. Worcestershire sauce
I recommend using lean ground beef if possible as it will help reduce the amount of fluids produced throughout the long cooking time.
You can use some dried stuffing mix instead of plain breadcrumbs. The stuffing mix typically has more flavorings in it so you will have a much more flavor-packed meatloaf.
If the sauce doesn’t take your fancy, then you can leave it out of the recipe. However, I highly recommend that you do add it as it will add quite a bit of flavor to the overall meatloaf.

Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Meatloaf for the fam
Ingredients for meatloaf (I don’t really measure)
• 1lb ground turkey or beef
• Veggies of your choice (I used green bell pepper and onion I used half of each)
• Bread crumbs
• 2 eggs
• Worcestershire sauce 
• Seasoning of your choice
• 1/4 of barbecue sauce
• minced garlic 1tbsp
Ingredients for sauce for top
• Ketchup
• Barbecue sauce
• Worcestershire sauce
• Brown sugar
Prep
• Preheat oven to 400
• Combine all the ingredients for the meatloaf only in a mixing bowl, and then place mixture in a baking pan and shape into a loaf. 
• Place in oven for 30 minutes uncovered.
• Combine all ingredients for sauce for the top of meatloaf in a bowl mix well. 
• Once meatloaf is removed from the oven, cover meatloaf with the sauce you made and place back in the oven, uncovered for an additional 20 minutes 
• Once meatloaf is removed from the oven, let it rest for about 10 minutes to sit and cut and enjoy
