How To make Crockpot Stuffed Green Peppers

green peppers

worcestershire sauce

lean ground beef
1/4
cup
onion, finely chopped

teaspoon
prepared mustard

tablespoon
pimiento, chopped
1
teaspoon
salt

can cream of tomato soup
12
oz
can whole kernel corn
Directions:
Cut a slice off top of each pepper. Remove core, seeds, and white membrane. In a small bowl, combine beef, onion, pimiento, salt, and corn. Spoon into peppers. Stand peppers up in slow-cooking pot. Add worcestershire sauce and mustard to soup. Pour over peppers. Cover pot; cook on low 8 to 10 hours.
Makes 5 to 6 servings.

Today I am sharing a recipe from a sweet friend that converted to a crock pot version! Thank you Ellen Homemade Delights for letting me attempt this! Her oven version link is:
Ellen's Stuffed Bell Peppers (Oven Version) Recipe
2 pounds Ground Chuck
2 Green Bell Peppers, cut into 1/2 or quarters, parboiled
1/2 cup plain breadcrumbs
2 eggs
Salt and pepper, to taste
2 tbsp onion powder
2 tbsp garlic powder
2 tbsp seasoning salt
Tomato Gravy
2-3 (8 oz) cans tomato sauce
1 (8 oz) can water
Salt
Onion Powder
Sugar, optional
Preheat oven to 350 degrees
In a medium-large pot on high heat, boil bell peppers for 4 minutes. Set aside. In a large Bowl with Clean Hands, mix everything until well combined (do not overmix). Roll Meat Mixture into medium-large balls. Stuff meat into the bell peppers. Pour tomato sauce and on top of stuffed bell peppers and on the side. Add water, salt, onion powder, and sugar (optional) in the middle to taste. Bake Stuffed Peppers for 1 hour. Serve with Rice, Green Beans, Collard Greens, or your favorite Side Dish.

Slow Cooker Beef and Rice Stuffed Peppers
SLOW COOKER BEEF AND RICE STUFFED PEPPERS
RECIPE:
INGREDIENTS:
1 lb. ground beef
5 bell peppers, tops cut off and diced for filling
1.5 cups cooked rice (can be leftover rice)
1 (24-oz.) jar marinara sauce, divided
1 small white onion diced
1/2 tsp. salt
1/4 tsp. garlic powder
1/2 tsp. dried thyme
1/2 tsp. dried tarragon (oregano works well too)
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Add the beef, cut up bell pepper tops, rice, 1 cup of the marinara sauce, onion, salt, garlic powder, thyme and tarragon to a medium sized bowl. Stir.
Stuff the peppers with the filling you just made. If there is any leftover filling add it to the bottom of the slow cooker.
Add remaining marinara sauce to the slow cooker.
Add the stuffed peppers in the slow cooker. I try not to let them rest on the sides of the slow cooker, but most of the time they end up falling over later.
Cover and cook on LOW for 5 hours without opening the lid during the cooking time.

SLOW COOKER STUFFED PEPPER SOUP

Love stuffed peppers? Then try this soup ASAP!
RECIPE:
INGREDIENTS:
1 lb. ground beef - browned and crumbled on the stovetop and drained
1 red bell pepper - diced
1 green bell pepper - diced
1 sweet yellow onion - diced
2 garlic cloves - minced
30 oz. chicken broth (two-15-oz. cans) or about 4 cups
15 oz. can tomato sauce (not paste, make sure it's sauce)
14.5 oz. can fire-roasted diced tomatoes
1 tsp. oregano
1/2 tsp. dried basil
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup uncooked Minute Brand Rice WAIT TO ADD (Minute Rice is parboiled rice that is dried)
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
Add everything to the slow cooker EXCEPT THE RICE. Stir.
Place the lid on the slow cooker.
Cook on HIGH for 4 hours or LOW for 8 hours.
When the cooking time is done add the uncooked minute rice. Stir.
Replace the lid and cook on HIGH for 20 minutes more.
Stir and serve.
Serve topped with mozzarella cheese if desired.
