How To make Crunchy Peanut Crackers
1 c All purpose flour
1/3 c Corn meal
1 c Roasted, unsalted peanuts
1 ts Salt
1 1/2 ts Sugar
3/4 c Water
1 c Peanut butter, crunchy
-- smooth Preheat oven to 350F. In a food processor, combine flour, corn meal, peanuts, salt & sugar & pulse until the peanuts are finely chopped. Alternatively, chop the peanuts by hand & mix together with the flour, corn meal, salt & sugar. In a separate bowl, whisk together the water & peanut butter until smooth. Add to the flour mixture & blend to form a cohesive dough. Divide dough into 2 equal portions. Roll out each portion of dough on a floured surface into a rectangle, 3/16" to 1/4" thick. This dough is very crumbly, so fix any cracks that occur by pushing the dough back together with your fingers. Cut the dough into squares (or use a cookie cutter for other shapes) about 2" across & place on an ungreased cookie sheet. Prick each cracker with a fork. Bake for 15 to 20 minutes until the crackes are a deep brown. Cool on a rack. Serve as part of a snack.

CRUNCHY INDONESIAN PEANUT CRACKERS - EASY TO MAKE
Indonesian Peanut Cracker
Rempeyek is traditionally served as a snack on their own or to accompany a meal. To add a modern touch, you can serve rempeyek with drinks.
Ingredients
250 gram raw peanuts (halved)
400 gram white rice flour
5 kaffir lime leaves, thinly slices
2 tsp coriander seeds
5 x 1cm pieces of kencur (Kaempferia galanga)
6 cloves garlic
6 candlenuts
1 tsp salt or more to taste
1 egg lightly beaten
500 ml water
2 tbsp tapioca flour
500 ml vegetable oil for frying
Steps
Pound the candlenuts, coriander, garlic, kencur and salt in a mortar and pestle until you have a smooth paste.

Remove the centre stalk of each kaffir lime leaf, then cut each one thinly.
Mix the paste with rice and tapioca flours and beaten egg and slowly stir in the water. You should have a thick, cream-like batter.

Pour the raw peanuts and thinly slices kaffir lime leaves into the batter.

Heat the oil in a wok. Draw the ladle around the side of the wok above the oil. You are aiming to form a thin skin of batter just above the oil. After about 30 seconds, slide the rempeyek off the side of the wok into hot oil. Cook for a minute or so, and then carefully lift the finished rempeyek out of the oil with a slotted spoon and drain on paper towel.

INGREDIENTS
---------------------
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup chia seeds
1/4 cup white sesames
1/4 cup black sesames
2 tbsp psyllium husk powder
(or 4 tbsp ground flaxseed)
(or 4 tbsp ground chia seed)
1 tsp coarse sea salt (adjust to your taste)
2 tsp dried oregano (or other herbs of your choice)
½ cup cold water
DIRECTIONS
------------------
1. Mix the seeds, psyllium husk powder, dried herb and salt together in a bowl.
2. Add in the water and mix everything well. Leave to rest for 15-20mins.
3. Spread the seed mixture on an ungreased baking tray (regular cracker thickness). Note: if the mixture still feels too loose at this stage, sprinkle a small amount of psyllium husk powder)
4. Bake in a 150C/300F preheated oven for 30-35 mins (or till crispy). Option to cut crackers half way into the baking time while the mixture is still slightly soft (10-15 mark).
5. Leave to cool for a few minutes and enjoy.
AVOCADO SPREAD

Chopped avocado
Vegan mayo (or vegan yoghurt)
A drizzle of extra virgin olive oil
Salt to season
Mix all ingredients together and that’s it!
