Curry Corn Chowder
Spice up your evening with this warming curry corn chowder, a twist on the classic New England comfort food.
Ingredients:
3 to 4 ears of corn, cooked and removed from cob (or one 16-ounce bag frozen corn, cooked)
10 ounces baby red potatoes, quartered
2 tablespoons grapeseed or peanut oil
5 anchovy fillets
1 medium onion, diced
1/2 tablespoon green curry paste
1-inch piece fresh ginger, grated
1 (16-ounce) can coconut milk
1 1/2 cups vegetable stock
1 tablespoon sugar or palm sugar
12 cherry tomatoes, halved
2 tablespoons tarragon leaves
Steps:
Bring a saucepan filled with salted water to a boil. Add potatoes and cook for 10 minutes. Remove with a slotted spoon and set aside.
In a medium saucepan over medium high heat, add oil, onions and anchovies. Saute until the anchovies have dissolved, about 5 minutes. Add the curry paste, ginger and coconut milk. Stir to combine, and bring to a boil.
Stir in cooked potatoes and corn, followed by vegetable stock and sugar. Bring to a simmer, then reduce heat to low and cover; allow to cook for about 10 minutes.
In a serving bowl, add some cherry tomato halves. Pour chowder over the top, and garnish with tarragon before enjoying.

Today I am making a great soup that we love in our house. This is because I really enjoy everything Buffalo Chicken and my wife loves a good soup so this one is a complete no brainer right? =) Buffalo Chicken Corn Chowder really is one of those really cool twists on a recipe that just makes you say WOW! I need to try this one. So go ahead and make then let me know what you guys think of it!
Total Time: 1 Hour
Makes: 5-8 Servings
Blue Cheese Gougere:
1/2 Cup Milk
1/4 Cup Butter
Black Pepper
1/4 tsp. Cayenne
Salt
2/3 Cup Flour
3 Eggs
4 oz. Blue Cheese, Crumbled
Buffalo Chicken Corn Chowder:
1 Cup Franks Red Hot Buffalo Sauce
2 Tbsp. Butter
4 Slice of Bacon, Chopped
1 lbs. Boneless Chicken Breast, Cubed
1/2 Yellow Onion, Chopped
1 Garlic Clove, Minced
1/2 Tbsp. Paprika
1/4 tsp. Red Pepper Flakes
4 Cups Corn
1 Potato, Peeled and Cubed
1 Cup Whole Milk
4 Cup Chicken Stock
Salt
Pepper

CHICKEN AND CORN CHOWDER
Ingredients
Chicken thighs 250 gm
Chicken powder 1 tbsp
Onion chopped ½ cup
Chopped bell pepper ½
Olive oil 3 tbsp
Butter 2 tbsp
Chicken stock 6 cups
Jalapeno 2 tbsp
Paprika 1 tsp
Salt n pepper to taste
Garlic 3 cloves chopped
Flour ¼ cup
Corn 1 tin
Evaporate milk 1 tin
Cream ½ cup
Ingredients to Serve
Chopped jalapeno
Parsley
Siracha sauce
METHOD
In your stock add corn cobs, cook for 15 mins, marinate chicken pieces with chicken powder, salt, pepper and paprika. Heat olive oil in a fry pan and sauté chicken on high flame, take it out and add onion, salt, pepper to the same pan with chopped garlic, now add 2 tbsp butter, add stock and sautéed chicken, simmer for 20 mins, add in evaporated milk, simmer for 10 mins, season with salt and pepper, serve with cream, parsley, chopped jalapeno and siracha sauce.
