How To make Curried Chicken Legs

yogurt, plain

lemon juice

brown sugar, packed
Directions:
Trim off any fat and excess skin from chicken; cut at joint into thighs and drumsticks.
In small saucepan [see tip below], heat curry powder with 1 ts vegetable oil over medium heat for 3 minutes or until bubbling; pour into large bowl. Add yogurt, lemon juice and sugar; whisk to blend well. Add chicken, turning to coat; marinate at room temperature for 30 minutes.
[Tip: save on time and dish washing by microwaving the oil and curry powder in the large bowl until bubbling.]
Place chicken, fleshy side up, on foil-lined baking sheet; brush with remaining yogurt marinade. Bake in 425F 220C oven for 35-40 minutes or until browned and juices run clear when chicken is pierced.
Serve with rice, chutney and slices of radish and cucumber tossed with yogurt and seasoned with a touch of mint and cayenne.
Makes 4 servings.
Per Serving: about 300 calories, 31 g protein, 17 g fat, 4 g carbohydrate.

Ingredients:
900g (2 pounds) chicken breast, cut into cubes
2 onions
3 garlic cloves
1 tablespoon grated ginger
3 tablespoons vegetable oil
2 tablespoon curry powder
1.5 teaspoons salt
1/2 teaspoon black pepper
4 large tomatoes, chopped
1 can (400g/14oz) coconut cream/milk
½ teaspoon garam masala (optional)
Coriander, chopped – for garnish
Directions:
1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally.
2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes.
3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens.

Simple Chicken Drumsticks Curry
Ingredients:
1.2kg chicken drumsticks
1/2 cup of cooking oil
1 inch cinnamon stick
4 green cardamom pods
2 small bay leaves
1 tsp of cumin seeds
2 medium size onions, sliced
1 inch ginger, crushed
8 cloves of garlic, crushed
1/2 of a habanero chilli
2 medium size tomatoes, roughly chopped
Some chopped coriander stalks
1 tbsp of ground coriander
1 tsp of ground turmeric
1 tsp of ground Kashmiri red chilli
1 tsp of crushed black pepper
1 tsp of meat masala
1/2 tsp of garam masala
Salt to taste
Some chopped coriander leaves
NOTE: Please adjust the spices according to your taste.
