How To make Curried Lamb Shanks In Wine
4 tb Oil
4 Lamb shanks
4 tb Flour
1 1/2 ts Curry powder
1 c Water
1 c Dry white wine
Salt, garlic salt and pepper 1 Onion slice thinly
I cook lamb occasionally in my Asian recipes, but not often as no one but myself likes it here. The main thing to remember about lamb is that it should be medium rare. Actually, I like it seared on the outside and nearly raw in the middle, but these days that's not such a hot idea. Heat oil in a heavy skillet with a tight-fitting lid. Add shanks and brown slowly on all sides. Remove shanks form pan. Add flour and curry powder to drippings and blend well; add water and wine, stirring, until thickened. Return shanks to pan, season with salt, garlic salt and pepper. Top with onions. Cover and simmer gently for 1 1/2 hours until tender. Serves 4. San Francisco Chronicle, 3-21-90. Perfect slow cooked lamb shanks!
This is a super simple recipe that is set and forget. Slow cooked lamb shanks are an Australian classic. Cheap, flavoursome and low effort.
Serving size 2
Cooking time 6 hours
Ingredients
2 lamb shanks (1 per person)
1 carrot
1 potato
1 celery stick
750ml/ 1 bottle of red wine
1lt beef stock
140g tomato paste
1/4 cup diced oregano
1/4 cup diced rosemary
1/4 cup diced thyme
1 brown onion
3 garlic cloves
3 bay leaves
Method
Start with course chopping the onion , carrot , celery and potato. Fine dice the oregano, rosemary and thyme .
In a large casserole pot get it to a high heat add some oil and brown the outside of the lamb shanks . Don’t worry about the inside as it will be slow cooked later .
In the same pot lightly cook the onion and chopped garlic until it is soft then add the vegetables and cook on med heat for 5 mins .
Make a space in the pot and add the tomato paste .Fry for 3 minutes to reduce the bitterness then turn the heat to low and add beef stock, red wine and bay leaves.
This can be cooked on stove top or slow cooker but i prefer the oven as it reduces chances of burning in the bottom of the pot and creates more equal cooking .
Cook in the oven at 160c/320f for 4-6 hours . Stir the braising liquid every 1-2 hours to reduce anything burning but try to avoid disturbing the lamb too much as it will fall apart.
When the lamb is cooked drain the remaining fluid into a seperate pot then cook on a stove top on high heat and reduce until thickness doubles .
While the sauce is reducing cut the tops off some green beans and cook in a fry pan with clarified butter /ghee or olive oil in a pan until soft .
Serve the beans and vegetables from the cooking pot then place a lamb shank on top . Drizzle the reduced sauce over the top and enjoy .
Traditionally this dish is served with mashed potato but I think the braised vegetables with the green beans make a lighter more tasty side.

Ingredients -
2 Tbsp (40ml) - Olive Oil
1 - Brown (Yellow) Onion, Roughly Chopped
2 - Carrots, Roughly Chopped
1 - Celery Rib, Roughly Chopped
3 - Kestrel Potatoes, Roughly Chopped
4 - Garlic Cloves, Peeled & Crushed
2 Tbsp (60g) - Concentrated Tomato Paste
500ml (2 Cups) - Cheap Red Wine
1 Litre (4 Cups) - Chicken Stock
2 Tbsp (19g) - Whole Cumin Seeds
1 1/2 Tbsp (14g) - Whole Fennel Seeds
2 - Bay Leaves (Fresh or Dried)
2 - Sprigs of Rosemary (Fresh or Dried)
1 1/2 Tbsp (2g) - Dried Oregano
7g (0.25oz) - Fresh Thyme, Roughly Chopped
Seasoning To Taste

200g (7oz) - Snake Beans or Green Beans
2 Tbsp (40ml) - Hot Water
1 Tbsp (14g) - Clarified Butter

The lamb shanks are slow-braised in a red wine tomato sauce with lots of fresh herbs and garlic. The lamb becomes extra tender, falling right off the bone! Make it a meal by adding some pillow-y gnocchi into the sauce when the lamb is done, or serve with my 'Butter Mashed Potatoes'. This lamb recipe is restaurant quality dining at home!

Lamb Shanks ????
4 Lamb Shanks
Rub down with oil
Season with:
1 tsp cardamom
1/2 tsp all spice
1 tsp turmeric
1 tsp paprika
1 tsp onion & garlic
Salt to taste ( I did 2 tsp )
1 large onion
4-6 cardamom pods
1 bay leaf
1 cinnamon stick
8-10 pimento seeds
Pressure cook on high for 40-50 minutes
You can also do this on the stove top, bring to a boil and drop to a simmer (I’d say at least 2-4 hours)
Rice:
2 cups basmati rice
3 cups lamb stock
1 tsp saffron
1 tsp salt
Salsa:
Bunch of cilantro
6 cloves raw or cooked garlic
1/4 cup olive oil
1 tomato
3 Serano peppers (depends on your preference)
Braised Lamb Shanks with Red Wine on the Stovetop
Braised lamb shanks are delicious and fairly easy to prepare. Indeed, it’s perhaps the perfect cut for those who like their meat cooked long, fork-tender, and full-flavored. This is slow-cooked on the stovetop for 2 hours.

80ml -Olive Oil
450ml -White Wine
750ml -Vegetables Stock
1tbs -Tomato Paste
1med -Yellow Onion
2med -Carrots
3 -Stick of Celery
4 -Cloves of Garlic
4 -Bay Leaves
2 -Sprigs of Thyme
1 -Handful Purpose Flour
Salt and Pepper to Taste

1x -Handful Parsley Chopped
2tbs -Anchovys Fish Fillets Chopped
2tbs -Green Olives Chopped
8-10 -Cherry Tomatoes
1tbs -EV Olive Oil
1tsp -Fresh Lemon Juice
