Carrot Cake Recipe (MAKES 1 LAYER!! Double recipe for two layer cake!!)
Ingredients:
1.5 cups whole wheat pastry flour or wheat flour
1 cup raw sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1.5 cups unsweetened applesauce
1 generous tsp of vanilla extract
1 cup carrots, peeled and shredded
Enough frosting. (Recipe below, but it will look much better with a WHITE vegan cream cheese frosting)
Directions:
Preheat oven to 350F. Cut out some parchment paper for the bottom of the 9 inch baking pans. In a medium bowl, whisk flour, sugar, baking powder, baking soda, cinnamon and salt together. In a large bowl, combine applesauce, vanilla and carrots. Add dry mixture to wet mixture in 3-4 batches, stirring until just combined. Fill backing pan(s) with cake mixture. Remember, this makes one layer. Double recipe if you want two layers. Bake at 350F for 45 minutes for cake pans (18-25 mins for cup cakes). Remove cake from oven, let cook for 20 minutes. Invert cake out of pan and let it cool on a wire rack. Once cool, frost and serve.

Frosting Recipe: (If you are not worried about fat, use a nice, white packaged frosting)
Ingredients
1 1/2 cups raw cashews (soaked in water for 2 hours)
1/2 cup coconut milk
8 medjool dates
1/4 cup lemon juice
1 tsp vanilla
Directions:
Blend all ingredients in a high speed blender until smooth. This frosting goes on a nice off-white color but it turns brown/translucent by the next day. I wound not recommend it if you are eat the cake the next day. But, it IS a whole food recipe so if that is important to you, its a good options. It does taste great.

Recipe for cake: 1,5 pck backing powder, 1,5 pck vanilla sugar or 1,5 Tblsp. vanilla essence, 475g flour, 300g sugar, 80g Lebkuchenspice, 3 Tsp. Cocoa, 135ml sunflower oil, 3 eggs, 400ml milk
Recipe for the Lebkuchenspice: 35g Cinnamon, 8g Clove, 1 Tsp. Pimento, 2 Tsp., A bit of nutmeg, 2 Tsp. Cardamom, ½ Tsp. Ginger

1932 Yorkshire Spice Cake Recipe
Welcome Friends! Welcome to Sunday morning in our old cook book series. We're going to do yet another recipe out of this Five Roses Flour Cookbook, and this time around we're going to do something called a Yorkshire Spice Cake. It's in the Christmas cake section, and I have never come across this cake before, so I'm interested to find out how it works out. One of the interesting things about this Yorkshire spice cake is that it only has one spice in it, and that is nutmeg, so it'll be interesting to see what the flavour is with only one spice.
Ingredients:
3½ cups flour
4 tsp baking powder
½ tsp salt
¼ - 3/4 nutmeg grated
3 cups currants
1 cup raisins
¾ cup mixed chopped peel
¾ cup shortening (pure Lard)
1½ cup brown sugar
3 eggs
1 cup sweet milk
Method:
Preheat oven to 325ºF
Cream the lard until light and fluffy, then cream in the brown sugar.
In a bowl mix the currants, raisins and a couple tablespoons of the flour.
In another bowl mix together the dry ingredients; flour, salt, baking powder, nutmeg.
Mix the eggs into the creamed sugar and lard, one at a time.
Slowly alternate adding the flour mixture and the milk to the creamed lard, sugar and eggs.
Mix in the currants and raisins.
Scrape half the batter into a 9x9” pan lined with parchment.
Spread half the candied peel on top.
Spread the remainder of the batter in the pan and top with the remaining peel.
Bake for just over 1 hour or until a tester comes out clean - there is a real risk of over baking and ending up with a dry cake.
