Cheesy Chicken Alfredo Pasta Bake
Servings: 6 - 8
INGREDIENTS
1 tablespoon olive oil
3 chicken breasts, cubed
Salt and pepper to taste
4 garlic cloves, minced
2 ½ cups chicken broth
2 ½ cups heavy cream
1 pound uncooked penne
2 cups parmesan
2 cups mozzarella
A handful of fresh parsley, chopped
PREPARATION
1. In a pot, heat oil and add chicken. Season chicken with salt and pepper, add garlic, then brown the chicken. Add broth, heavy cream, and pasta, and bring to a boil. Cover and reduce the heat to a simmer for 15-20 min.
2. Turn off heat and stir in 1 ½ cups of parmesan cheese. Pour half of the pasta into a greased 11x7 inch or 9x13 inch baking dish. Sprinkle evenly with 1 cup of mozzarella cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella and ½ cup of parmesan.
3. Broil 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.
4. Serve warm and enjoy!

3 cups Egg Noodles
2 tablespoons butter, divided
1 small onion,
diced
2 stalks celery
2/3 cups green peas
2 cans tuna
1 can cream of mushroom soup
1/3 cup milk
1 1/2 cup cheddar cheese
1 tablespoon parsley
1/2 cup panko bread crumbs

Mac & Cheese with Tuna Casserole
This casserole was a favorite of my sons when they were growing up. It is the simplest of casseroles, very few ingredients, yet so delicious. A simple box of mac and cheese as remembered from our childhood with tuna added. Try this for dinner if you want a quick, easy meal to make for your family dinner. Serve with sliced tomatoes, green beans, or just by itself. Directions below.

Ingredients:
1 box macaroni and cheese
1 can cream of mushroom soup
1 large can tuna, or 2 small cans
2 Tbsp butter
1 sleeve butter crackers
1 Tbsp butter, melted
Directions:
Preheat oven to 350 degrees
Boil noodles per package directions. Drain, do not rinse. In same pot you boiled noodles in, or a large bowl, add noodles, soup, cheese package, tuna, and 2 Tbsp butter. Stir together well. Add to a casserole dish. Crush crackers into a small bowl. Add melted butter, stir together. Sprinkle on top of tuna mixture. Bake 350 degrees 15-20 minutes.

Trini Tuna Casserole Recipe
Yield: 6 to 8 Servings
INGREDIENTS
Elbow Macaroni - 400g
Heavy Cream - 250 ml
Evaporated Milk - 250 ml
Eggs - 2 large
Margarine - 4 oz
Onion - 3/4 cup (finely chopped)
Pimento Pepper - 1/3 cup (finely chopped)
Garlic - 1/8 cup (finely chopped)
Tuna Chunks in Water - 3 cans (drained)
Lime Juice - 1 tbsp
Scallions - 1/4 cup (finely chopped)
Sliced Mushrooms - 1/3 cup
Whole Kernel Corn - 1 can
Salt - to taste
Black Pepper - to taste
Cheese - 1/2 lb (grated)
METHOD
1. Fill medium stock pot with 8 cups of water and season with 1 tbsp of salt.
2. Heat over high heat bringing water to a boil.
3. Add macaroni and cook until al dente (about 8 minutes).
4. Drain, rinse with cold water and set aside.
5. Preheat oven to 350°F.
6. Whisk together heavy cream, evaporated milk and eggs.
7. Set aside.
8. Heat medium sauce pan over medium heat.
9. Add margarine and allow to melt.
10. Once melted, add onion, pimento and garlic.
11. Allow to cook for 2 minutes.
12. Reduce heat to low and add tuna, lime juice, chive, mushrooms and corn.
13. Mix until fully incorporated.
14. Add milk mixture, 1/2 of the grated cheese and season with salt and black pepper.
15. Mix until fully incorporated.
16. Allow to cook for 5 minutes ensuring to stir continuously.
17. Immediately pour into greased baking dish.
18. Bake for 30-35 minutes.
19. Allow to cool for 15 minutes before eating.
20. Enjoy!
